Just wondering if anyone has experimented with max entity cramming "cheats" for cows/pigs? I know there is one for 1x2 mobs like skeletons/zombies with a piston pusher into a ladder but I'm looking for something for cows in particular which doesn't work with that one. I want them all in one place to kill them with sweeping edge & looting for the raw meat.

"piston pusher into a ladder" design not known/not understood… picture or link would help
Assuming what you're looking for is a way to temporarily store large numbers in a small pit for easy slaughter:
water works (can be rigged to a dispenser which allows it to be turned off so as to use the miob cramming as a softener)
vines/ladders on one wall (at least through 1.13.2) [Note vines will spread, but not to glass or fences.]
In either case, placing blocks over the pit (2 deep minimum, 1 + fence/wall recommended) to leave only a one block high opening will avoid falling in as well as keep cows from getting out when hit (reduce for pigs), yet still leave room for your sword strikes.

WARNING: I have an extemely "grindy" playstyle; YMMV — if this doesn't seem fun to you, mine what you can from it & bin the rest.

I assume you're trying to cram them in without them dying from the cramming?
How about
/gamerule maxEntityCramming 0
?
Just testing.
