I am planning an item sorter for a survival world but cant figure out what to sort or rather how to sort the items. I already have the sorter built (in creative).I know that is a bit of a stupid problem but any help and suggestions would be much apreciated. to clarify I have the contraption built and it does work but I want to know what items to sort

If I understand correctly, you have the solution, but need assistance finding the problem…
Fundamentally, what one wants from one of these is to remove some of the drudgery from play; various tedious tasks (depending on the type of sorter) can be automated to allow more time to concentrate on the areas of the game one enjoys.
.....One use of item sorters is to keep one's storage organized [quite helpful to avoid wasting an hour looking for that half stack of repeaters one made last week]. These systems tend to be large and IMO the 'best' versions are variations of a system introduced (or at least popularized) by TangoTek qv. Automated Silent Storage System with Multi-Item Sorting [v2.0] [The sectional input mentioned @~4:20 is worth noting.]
.....These are designed to sort 'everything' into chests in a logical arrangement (eg. all RS components are near each other.) [Given the problems that can occur when these extend across chunk boundaries, my preference is for multiple smaller systems rather than a single 'all-inclusive' version.]
.....Another use for item sorters is improving the productivity of 'farms': the [https://www.youtube.com/watch?v=7FieCkACm5Y]Non-Stackable Item Filter is a good example. [The idea is not original to Mumbo Jumbo, but he does do a nice job of explaing the device.]
By using the difference in comparator output between a hopper with one stckable vs 1 non-stackable item the number of fractional stacks in the down stream storage is reduced. [Very useful with AFK fishing.]
.....The more common sort of sorter (which organizes items on a per chest stack basis) [qv. Quick & Easy Item Sorter (With Overflow Protection) which is a clear explanation of the design I prefer] can do something similar in mixed farms.
I have cane, melon, pumpkin, and catus farms built into my first iron farm [probably overly complex, but a worthy experiment ].
The sorter of this style that is attached uses five filters to sort iron, poppies, cane, melon slices, pumpkins, cactus and junk to into six chest lines.
[Cactus production is slow enough that catching the occasional oddiment (mostly dropped blocks from the build process) is unimportant.]
This allows me to get all of just the item I need without having to check multiple chests.
Generally, one wants a sorter when one will be regularly either generating or bringing 'large' amounts of 'mixed' resources to a specific point.
[If all one' RS supplies fit in a single chest, there is little need of a sorter.
Neither is a sorter useful if the item mix is homogenous – or nearly so. eg. If one is logging one's oak patch the effort to sort stacks of oak logs, a few stacks of saplings, half a stack of apples, and the odd leaf block (from 'mistakes' with a silk touch axe ) is unlikely to warrant a sorter.
Contrariwise, a system to sort cobble, smooth stone, dirt, as well as the various "-ites" and ores placed at the exit from a mine may well be worth the construction costs.]

WARNING: I have an extemely "grindy" playstyle; YMMV — if this doesn't seem fun to you, mine what you can from it & bin the rest.
thanks I just got so tired of searching for items that I jumped to a solution without anylizing the problem I think with your comment and some thinking it over I now know how I want to sort my items
