I don't think Minecraft will die. First off, hunger was added in beta 1.8 not 1.2.5. Second, Minecraft updates have never been about adding realism. I mean, seriously we got witches two updates ago. Updates have always added new mobs and new blocks, if anything these recent updates contain more balancing than new content.
The "end" would be a happily ever after when the mod API is released and Minecraft becomes open source with a few updates here and there. An analogy would be a human dying of old age but then haunting on earth. The "end" would be when Mojang no longer releases updates and that would translate to when the ghost moves on
But then I found Infiniminer. My god, I realized that that was the game I wanted to do. I played it in multiplayer for a while and had a blast, but found it flawed. Building was fun, but there wasn’t enough variation, and the big red/blue blocks were pretty horrible. I thought a fantasy game in that style would work really really well, so I tried to implement a simple first person engine in that style. [Minecraft]

Literally, Notch himself said that Minecraft is a fantasy game. The argument of anyone who has said that Minecraft must be realistic is now invalid. You can no longer say that people don't ride pigs IRL or anywhere else. Minecraft is a fantasy game and it has the right to do whatever it wants with itself. They can add in aliens, unicorns, space / time travelling watches, presidents for civilizations, and even tomato sauce with electrical functions because Minecraft doesn't need to be realistic. It is a fantasy, like Jack and the Beanstalk and My Little Pony. Period. Shut up.
It's not a very good game, and the mods that keep people playing are dying one by one, but no viable contenders have popped up either.

Not true. Actually, human babies are in their mother's womb for closer to 10 months. Other animals have completely different times that humans.

That is most definately not a happily ever after ending. The mod API is fine, not my thing. Vanilla is what Minecraft is meant to be. However, as long as Vanilla is available I will be fine. But once Minecraft is an open source game, people will be so obsessed with the possibilities that they will forget what Minecraft was meant to be. YouTubers like the Mindcrackers who base their career off of the vanilla game will need to find a new way to make videos. You my friend have the wrong idea.

On topic, Notch doesn't want Minecraft to be realistic. If he did, then you'd have a thirst bar, a breath bar & a warmth bar. Also, you can't ask for realism in a game where you can make a sword out of the hardest material on the planet with a hammer, a saw, & a pair of pliers, Wooden logs float in the air, explosive green things kill you, & having an inventory denser than the sun.
realism is infinite theres plenty more to be added its nowhere near complete: fish red dragon pigman ect.
I also feel theve gone to far look at 0.0.0 2 blocks no placing blocks finite worlds it was hard to walk
but look at the progress its nowhere near done
