I don't mind My Little Pony: Friendship is magic. As a 90's kid born in the late 80s, I grew up on those sorts of cartoons -- Rainbow Brite, Strawberry Shortcake, Gummi Bears, Care Bears, etc. I understand Minecraft is about doing everything you could ever possibly imagine and I absolutely adore and fangirl over things like Lord of the Rings and Legend of Zelda, that ain't gonna mean I'm gonna go around naming/texturing my horses to look like Epona or Shadowfax or Shadowmane.
Does it really make sense to take a self-sentient, intelligent creature (like the horses/unicorns/animals in MLP:FiM) and reduce it to (let's be frank here) a dumb animal and parade the skin around as a flimsy shadow of what it actually represents like some sort of ridiculous parody and mockery? Would you secretly have your avatar lean over over the horse's neck and bitterly and not a little angrily whisper into its ear, "You could never be the real Pinkie Pie."
Narnia had it right. You didn't ever ride a Talking Beast unless you had permission; I don't know how this ties into anything, I just wanted to say it.

That was amazing, you sir are a great orator, also I should do my programming homework instead of retexturing Minecraft animals to characters from a childrens TV show

I agree that MLP skins are silly, but the chance that Mojang would add them would be next to zero (April Fools update MAYBE). So chillznik.
I DO have an issue with you calling horses dumb though. Humans learned LONG ago that horses ARE MOST DEFINITELY NOT "dumb" and that's why we for the most part took them off the menu. They are one of the few creatures that we are reasonably sure have a form of sentience, and if you have ever gotten to know one or had the chance to see them work I'm sure you would agree. I live in a place where I can go to Agricultural Fairs and as part of the program of events they have Ox Pulls and Horse Pulls. Think of it like competitive weight lifting but for animals. When you see oxen pull the weights, they could care less and are only interested in walking away from the noise the driver makes as he tries to make them go in a straight line. HORSES on the other hand are TOTALLY on board with what is going on and as soon as the hitch drops on to the sled hook they are off. They WANT to pull that weight; in fact it almost seems like they understand the point of all this and want to work as hard as they can to out do the other horses! That sounds like "pride" to me and non sentient animals most certainly don't feel proud of their accomplishments.
As someone who... *ahem* watches the show... (big surprise, right guys?) I can say that looks terrifying. I don't think the show should be brought into any other game.
You know you want one
also texture (modifed from Mine Little Pony skin)
