I'd say that for any game you would only like the version you played first. The only reason why you don't like it anymore is because you aren't getting all of the surprises you got when you first got the game since you've played it so much.
If you really want something new that is good, install a mod or two that you like.
Let me get this straight...
You don't like the new updates, but your favorite servers update. You update so that you can play on your favorite servers, which have updated to the update you hate. Isn't that fairly contradictory?

Discussions about the Mod API (As it will be called when released, plugins) included the Mojang team stating they wish to convert vanilla minecraft into a plugin, or in this case, a series of plugins. The goal they have is for features of the game to be possible to add, modify, or even REMOVE features we don't like. This means if you don't like witches, remove witches. Hate hunger so much? remove it!
Now we all know this won't be for a loooong time but it will happen. I personally enjoy all thats been added since even beta 1.8 and have been around since alpha 1.1.2_1 so yeah.

Sponges-They just had to make them useless.
Blindness and nausea potions-They were very uselful in adventure maps.
Monsters not falling down pits-How can I make traps now?
Endermen jumping in water-Say bye to easy work.
But other then those, I love the new features.

Why are you complaining? What is good about MineCraft is in most updates it adds something new to the game, which will make a new nostalgic memory. For example: When I first heard a bat, I freaked out. (Naturally I never read what the update had ) I searched around the cave trying to find out what was making that noise. When I found the bat, I just laughed. It was probably one of my most memorabilia moments in MC.

Ok. First Of All. Minecraft Is NOT Dead. If You Go To The Website There's 8,455,385 And Still Counting People Who Have Bought The Game And Maybe 500 Don't Play The Game Anymore. Minecraft Is A Lively, Updating, And Moddable Game. So If You Don't Like It, Don't Play It. Instead Of Ranting On About How The Game Is Dying. And I Remember My First Minecraft World, A Small Little House Behind A Mountain. And I Remember The Rainy Nights And The Creepers Staring Through My Windows In Minecraft 1.8. I Never Expected Half Of The Things That Are In The Game Today To Be Even Thought Of To Be Implemented Into The Minecraft Game. But Some Updates Had Some Bad Things. Ok. I see where you are going.
But I love witches! They are, currently my favorite hostile mob. Any new mob can be considered a glorious and grand update for minecraft. If you knew anything about game design, you would realize that it takes a lot of work to make a mob.
(Although I will agree that bats, as an aesthetic mob, seem useless to me.)
I think Minecraft is going great with their dev scheme so far. Of course, no game is perfect, and neither is minecraft, but they are still doing a great job.
I think that before you go and rage at the developers, you should try making a game.

The first time playing minecraft is special. I remember the joy of digging my castle out of cobble, making a bunch of pressure plates for my floor, and learning redstone. Ah, memories.
So people who start playing now will have more things to discover, play around with, and you are saying, "Mojang, don't give that pleasure to them."

Bats have jumpscared me before. I am really enjoying Minecraft's development now. It's nice and organized, but still laid back a bit, so you can tell the devs are enjoying themselves instead of rushing.

I wish they would come out with a normal update plan, running a bukkit server is killer to have these random updates... How about a 3 month or 6 month big update so that the updates feel more meaningful. You know these small updates to introduce the color blue kind of get lame when they are so quick. Give a real timetable of updates and have some order crying out loud. This mess of updates really messes things up often.
Here's another idea, make a real peice of server software. With you know, things like OPTIONS. How hard is it to make some options than you need.

I only joined Minecraft in 1.2 of the full version, not beta or alpha or all that you old geezers used to play, but I like new features! I was never around to see the old land generation, or the old texture of cobble, but all these new features truly make Minecraft an enjoyable, The one thing I don't agree with are bats and horses (There gonna add them in 1.6) Bats are painful to kill, make annoying sounds, and once you kill them, they don't drop ANYTHING, it would be cool if they dropped a Bat-Wing, used to make batterangs and brew a potion of jump boost :3. Horses, are just not "Minecrafty" enough, they arent like the derpy pig, the oblivious cow, the happy sheep, or the High-Mushroom cows, and the scary zombies! They are the proud steadfast horses, which really don't fit in with the other mobs, and it feels like something out of, well a mod.
