It would be cool if farmer Villagers recognized wheat farms and harvested and replanted crops, but then you'd have the problem of Villagers harvesting your crops, it would at least be neat if they planted seeds on any farmland they walked by.

The villagers do need to individualize to their professions. The priests already have, but we have others that could, like blacksmith repair and, well, butchers killing random animals would be a bad idea..
I'm glad they don't care. When I found my first village this patch the first person I saw wanted to buy wheat off me. I saw this as him hiring me to work his fields. Then later I got a trade looking for uncooked beef, so I hurded some cows (with the same wheat) and fenced them in and make my cow farm part of the town. If the villagers or Golems started getting pissed at us attempting to help them by farming in their town, making their houses bigger and better, and general town improvements it would become a lot less fun imo.
It might be cool if, when you harvest the grain in a village, all villagers within a certain radius become... not 'hostile', exactly, but... less inclined to trade with you (you lose the 'extra' trades beyond the first one), and demand higher prices....

Yeah, like if you build a village in your mansion and when you harvest your wheat farm next to them they get upset with you for no good reason.

^This. Minecraft has way too many possibilities for any super advanced AI. What they would see as stealing their crops would be you harvesting your wheat field near the village or you harvesting their wheat because they pay you for it, which as another poster said, YOU thought of as being hired to farm it. Anything beyond an iron golem attacking you for killing them would cause too many issues for the benefits.
You can't tell, but the Testificates get furious when you farm their wheat. They will act all nice to your face but later they will be all "WTF! WHY DID HE FARM ALL OUR WHEAT THEN TRY TO SELL IT TO US?! And why did we buy it...?"
But being the humble people they are they will never say any of this to you, nor stop you farming their wheat.

Yeah, This is really the problem. If you try to get over that and make it dependent on villages would mean they wouldn't really recognize player fields. Hmm.... let me think.
Ultimately I think if Farmers just replanted fields the only balance issue would be seeds. However I think to solve that Farmers should have the ability to recognize single chest and draw seeds from it in order to plant.
Librarian's should be able to trade randomly generated written books.
Blacksmith should be able to recognize when he's been robbed. >___>; How? I guess the chest could generate with a little extra data that links the contents with the Blacksmith. He could change the contents of the chest (like changing 1 of the items or rarely adding another item altogether). If you rob him, he attacks you until he forgets about it. (And if you then kill him, the golems if there are any would be after you). Since that chest has special data associated with it, once broken it becomes a regular chest which the Blacksmith can't recognized.
Butcher's should sell animal spawn eggs, It's a unique service and item you could only get from them, and makes sense in the context of minecraft (where does the Butcher get his animals, he spawns and then kills them when you aren't looking) x3
Priest should be able to heal Villagers if they take damage.

You don't need a spiritual leader to achieve enlightenment.
They would never regard what's theirs and what's not, because you could make a farm for them too.

They also do very little to maintain their fields, so you'll be doing them a favor using the seed to develop additional farms.
