I trade with villagers, and not one of them offers another trade besides the one they initially offer despite the buttons indicating there are other trades available. I've checked tons of villagers across tons of worlds and NOT ONE offers more than his default offer. Either remove the buttons or actually have more offers. Again, this is not the first time this has happened with the recent releases. Please fix this!
I'm sure the community has experience other deal-breaking bugs. ('Cmon, not saving my changes on exit?!). What other bugs are really chafing your chaps?

Snapshots contain unfinished changes. No one at Mojang will see this thread, and they're already hard at work at fixing bugs and stabilizing the next official build.
I think you need to keep to using 1.2.5. I've never even heard of these bugs. Except for the animals getting out of their pens thing but that's in 1.2.5.

You actually have to trade with a villager to generate more offers. Are you doing this?
Because if you are not, that is an intended feature, not a bug. Villagers will only make a new trade offer once their newest trade has been done at least once and the trading GUI closed.

You should always backup your worlds when messing with snapshots.
Animals have had this issue for a long time now (on servers), however they are MUCH better that they use to be. My farm works fine.
In order to unlock new trades you need to do what Black_Drath said, trade then close and re-open the gui, BUT it has been buggy for me (and probably others) and the only way I can always get them to generate a new trade is if I wait for the post trade particles to stop and then wait another few seconds then re-open the trade with the villager (also not a guarantee it will work).

Don't play vanilla? You don't know **** about minecraft.
Out of those, I've only had issue with the offline one.
The ones I hate:
Dragon stops damaging after you hit it.
Half blocks still give off full block shadow.
NewWorld becomes NewWorld again after you rename, enter, and exit out again.
The /time set # seems to be broken in some way, it will still be dark when I use it to set it to day.
Villagers getting stuck in floors.
Smooth half slab does this weird thing where it occasionally flickers to the top slab in creative inv?
Redstone torches would still perma-burn, but last time that happened was 22a, not sure about 23b.

This bug existed in 1.2.5, and may be magnified now that the multiplayer engine is being used. It may sound stupid, but you should use solid 1-meter thick blocks stacked 2 or 3 meters high for animal pens. With how buggy fences are, all they're good for is decoration.

As Black_Drath said, you need to trade with the villager to unlock new offers.

You know, I had this happen to me also...I think it fixed itself when I closed the game and renamed the folder in the saves directory itself. At least, it's showing the name I want now.
Other than that, the only really annoying bug I found was 'phantom' cave spiders in an abandoned mine. They don't exactly seem to be phantoms though, but perhaps actual cave spiders that have either gotten stuck, or maybe the game is just confused on where their actual position is...I managed to fight them, but it's tricky to fight them when I'm not 100% sure of their actual position. Usually when I do manage to hit them it stops happening to them...mostly. Weirdly (not that I'm complaining) I've only noticed this with cave spiders. No idea if this was common in SMP since I don't actually play it a lot.
Oh yeah, I forgot another one, the water flow blocks don't go away unless any water source touching it goes away. What I mean is, I can block off the flow it originally came from but another flow can make it persist, keeping a bunch of water in a spot it shouldn't even be.
In this situation, I put a block under the middle flow to make it spill but then blocked it. The water persists to spill all over the place even though it has somewhere to go into the ground and nothing keeping it spilling around.
Funny thing is, this glitch has been around since alpha too.
I don't really mind the bugs very much. But I do know that 2 extremely noticable bugs need fixing. 1.) The lighting bug where there's tons of totally dark areas where light should be, especially in cliffs and ravines. 2.) The Chunk loading bug. I'm not really complaining or ranting because I know it's just a snapshot and not the real update. I'm just saying, if any bugs need to be fixed, these 2 bugs need to be the very first to be worked on.
It doesn't matter anyway, except for forum organization purposes.
Mojang has never seen this thread were bugs are reported, I have my doubts they even acknowledge the existence of said thread.
I can't remember how many times game breaking bugs in snapshots were reported multiple times there, and even then Mojang proceeded on releasing an official update with that bug, just to quickly fix it after the players spam their twitters saying they cannot play because of the bug.
Not sure if you're talking about the bug-reporting thread in the forums, or the wiki. But speaking of the wiki, I can tell you that Dinnerbone, EvilSeph and Jeb frequently read, as well as respond to the bugs-section in the wiki.

They don't read the bug topic in this section simply because most of it is the same crap posted over and over or someone posts about an intended feature or a failure on their part.
