Goats are pretty unfinished - I predict that they'll be fleshed out in minor 1.17.X updates. Currently there's no reason to breed them at all; and Bedrock has horns drop but Java doesn't. I also predict they will ultimately drop mutton.
I more tentatively predict that bundles will not wait all the way to 1.18, but will likewise appear in 1.17.X. Sculk sensors will wait, though.

Double checking, goats have a use as a milk source.
Cows runs out after being milked too many times too fast, so goats too. Breeding is how to get more milk then.
They are also good alarms or guards since they attack anything that moves, especially screamers.

I can't find a source but I remember Mojang saying that goats will not drop any food item, since they want to "discourage violance against animals". They will not change any of the old mobs since that will cause too much of a pushback from the community, but any future mobs will not drop meat.
Also - don't be too excited for the goat horn. We still have no idea what kind of use it will have, or if it will even have a use at all.
I predict that they won't change anything about the goats. Mojang do not deserve the praise they receive, they leave too many features unfinished for years and years. Look at the smithing table - it barely got a use in 1.16, and the fletching table still has nothing. The rabbit hide was added in 0.1 and they are just now adding the first use for it (The bundle makes absolutely no sense to require a rabbit hide from a gameplay point of view, but that's a whole other story). There are many mobs that do absolutely nothing and drop no unique items - pandas, polar bears, llamas, bats. People who tell you that "not all mobs should have unique drops" are just making excuses on behalf of Mojang. Sure it adds flavour to the game, but that's all it does. Why not add some actual gameplay?

The goal Mojang has with mobs implicitly is to allow survival on peaceful or hardcore difficulty, and on difficult biomes even if it's now rare to spawn in them. So thus we have redundancy of drops such as slimeballs or rabbit hide (4 make leather btw).
my new world is right where tropical, desert, tiaga and i think plains. very interresting. will do a farm here but no fruit other than sweetberrys, melons and pumpkin. and i can make cookies. plenty of iron so i can protect myself.

That's a very rare and lucky seed.
I haven't seen something like that since The Haunting 2 Minecraft movie on youtube.
-1192028314. i will keep it. thanks for reminding me. 4950 64 0 point of origin on bedrock. xbox one. level 36 i found a stronghold. spiders galore but finally found the spawner and put a torch on it. interesting world.

there is a portal very close or whatever you call it. it has a block of gold. then there is a desert temple in walking distance from the point of origin. i would not be surprised to find a tropical temple also

Haven't found the portal but the temple + village is nice, set my home there for now
Minecraft 1.17 is amazing. I really like that they added the goat
It's eh to me, cool little things but 1.18 will be a much more impactful update to my playstyle.
Main change to me is fortune working on iron, by my play rules on conservation that means I now must source all my tools from structures until I get fortune.

I'm concerned that fortune working on iron ore may not be enough to compensate for its increased rarity,
this punishes people for mining and actually putting in the work to get their resources.
the portal is on the ocean. 4833 162. not far from point of origin. i get there by boat. i got enchanted golden pickaxe with fortune II and unbreaking III. how do i use it? i am unfamiliar with use of enchanted items. i got an enchanted book from the treasure in the desert temple also. i do know you can use an anvil to restore use to an enchanted item and iron is so plentiful in 1.17. at least in the stronghold. it is on level 34 where i found it. 4926 35 -6 is where the spider spawner is at.

While the ores may be rarer, they will also be easier to find due to having more exposed underground areas as a result of the larger caves. Also, there will be rare veins that give you a whole ton of the ore. Really, only strip mining has been nerfed, as now ores spawn in more diverse y levels and it's harder to get a level that's good for most things. Strip mining was the most grindy method, so I see this as a win.

Remember those versions that minecraft pranked us with? Specifically:
Minecraft 2.0
Minecraft 1.VR-Pre1
Snapshot 15w14a
Minecraft 3D
Those are still downloadable! Watch this video for 2.0:
To download the other ones you need to make a folder in the versions folder for minecraft and put the client and JSON file for the versions in there. They all need to be named the same aside from file extensions. Once you do that, you will be able to choose that version when making a new profile with the minecraft launcher.
I'll take your bets.
What's the use of horns?

Goat horns currently just make a raid sound, but we have been told there will be more to them than that.
I hadn't heard that bit about new animals not dropping meat, do you have a reference? If true, that's pretty lame.
I don't think all mobs need a unique drop, but it just makes sense to domesticate goats.

Apart from making the game more grindy by making ores rarer...

Did I miss something? Ores are going to be rarer now? How?

My Opinion On Powdered Snow:
There are probably endless possibilities of traps or trolls to use with Powered Snow partnered with Dripstone
My Opinion On Archaeology:
I am extremely excited about archaeology witch I believe will be realise in Part 3 as I have not much too say because all info about it is unknow
