So I copied my world over from my last computer. Inside of the world folder a folder called datapacks. The file treecapitator for version 1.13.2 is in there and I guess it works for version 1.16.1 since it is still working.
So I just started playing again after a while and I have noticed that when I hold left control (added: my left control is crouch) and mine the bottom log of a tree with an axe, the whole tree gets mined.
Is this a new feature Minecraft added?
I used to use treecapitator before, but I have since then re-installed windows and re-downloaded Minecraft and yet it is still doing it. There isn't even a mods folder in my %appdata%. I have looked through all of the change logs and can't find anything related to it with my quick skim. This is really confusing me and i'm hoping you guys can clear some things up. Thank you.

I'm on version 1.16.1. I tried the same thing on a different minecraft account on a different computer that has never used mods and it didn't work as well. Now i'm wondering how this keeps happening.
Yes, the left control is my crouch button and shift is my sprint button, after switching my crouch button and sprint button back to normal, left control does not do anything. But when I crouch it still mines the whole tree!
It usually happens on every tree unless I remove some of the wood blocks first. The 1st tree I didn't crouch and it only broke one block. The 2nd tree I did crouch and it broke the whole tree. The third tree I mined some leaf blocks to modify the original tree and shift mined to see if it would still fully mine the whole tree.

Are you playing on the official vanilla game (downloaded from Minecraft.net)? Because I can say with absolute certainly that this is the result of a mod, such as "Treecapitator" or "Vein Miner", or a data pack, not vanilla behavior - no "bug" can ever possibly make a whole tree break when mining the bottom, and only when sneaking (note second item under features), which needs to be deliberately coded in, and it certainly wouldn't only affect certain users as everybody downloads the exact same game from a centralized location (if you are playing the official game, that is) and file corruption can't possibly cause this (the launcher also validates the checksums of every file every time you play, except for data files (options.txt, saves, data/resource packs) - the only other way this could happen is if you installed a data pack.
This is what I was thinking too. Since no-one else is able to replicate it, I am assuming it must be some left over files from one of the mods I used. When I re-installed windows I never copied my %appdata% folder over to my new user profile so i'm not sure how the mod files would have migrated over. I downloaded the vanilla Minecraft installer from https://minecraft.net/. I haven't installed any other resource packs or data packs. I will try to vein mine some ore and see if that also is mined, if it does then this has to be a mod file remnant or something.
SOLVED. JUST FOUND OUT WHAT IS HAPPENING:

Yep. I looked up the old mods data and instructions and I was able to type in "/trigger TreeCapitator" and the menu came up showing that it was valid and installed. So I removed it and it no longer destroys trees when crouching. Thank you EditName and TheMasterCaver for the help!
I'm used to installing mods way back in the day where you used to open a jar file, drag and drop a bunch of folders and .txt files. There is a new way to install mods or "data packs" as they are being called today and I completely forgot that you have to go into the world folder and put the data pack into a folder labeled "data pack". When I got a new computer I copied the whole world folder over and the data packs were also copied with it. When I looked for mods I never thought to open the world folder and look in datapacks. It was just me forgetting things like usual

Added: I have made a video showing this here -
What version you playing on?
Added: I tried it in 1.16 and that is not a thing
Nothing can go here but time itself.

Added - I added a video on the original post.
Interesting, so it doesn't happen on every tree?
Also is Control your crouch?

Also thanks for the quick responses!
I been trying to replicate it but I cant do so. I would report it as a bug https://www.minecraft.net/en-us/bugs/

Will do! Thanks for your time.

TheMasterCaver's First World - possibly the most caved-out world in Minecraft history - includes world download.
TheMasterCaver's World - my own version of Minecraft largely based on my views of how the game should have evolved since 1.6.4.
Why do I still play in 1.6.4?

Good call on that.
Awesome find. Looks like TheMasterCaver called it

i've never heard of having files left over from mods but not having them installed. sounds interesting.

Glad you got it figured out!
Just testing.
I watched the video, you said it was a 1.13 data pack, so probably broken.
