Supposedly no, a workstation is all that's required. But since they won't restock during the night anyways, might as well let them sleep, if only as a reminder to players to go sleep themselves if they want the villager to restock.

I'm glad I saw this post!
I'm building up a trading hall (way out in an ocean monument, it seemed like a good idea at the time, no annoying villager noises at my base and no drowned to kill the villagers, but I hadn't reckoned with how many times I'd have to run back and forth to get new things to trade as they leveled up)
Anyway, it happens almost every time, I finish harvesting the sugar cane and carrots to trade and find that the villagers have just gone to sleep.
And it had completely slipped my mind that I could make the night pass by sleeping myself!

Of course that'll mean running back to my base to get some more wool to make myself a bed (or stealing one from one of the villagers) but I'm going to want some more villager beds anyways.
Shepherds at high levels tend to sell beds fairly cheaply.
One thing I recommend is to keep a bed in a chest at your trading hall and only bring it out when needed, to keep villagers from trying to path to it or seeing an extra bed and managing to breed when you don't want them to.

Do villagers need to sleep to restock their trades.
