How is this going to work on multiplayer servers, where you can't skip over the night by going to bed? Am I just supposed to lie there until morning to reset the insomnia? Or can I just pop out of bed as soon as I fall asleep, and I'm good to go?

Silly question for all you people who always/regularly sleep through the night to avoid dealing with hostiles: why not just play on peaceful?
My observations so far after ~12 minecraft days out in the open since i updated my test world to 18w07c (no idea when i last slept - i generally only sleep to re-set spawn after travelling or before setting off on a Dangerous Expedition or whatever - but i'm sure it's been many, many days):
o updating an existing world to a world with phantoms re-sets the insomnia counter, so you shouldn't be attacked for the first few nights after you update
o killing phantoms seems to reset the counter; my first phantom attack was 5-6 nights after i updated (and set sail looking for new oceans), the second was 5-ish nights after that
o keep your sound up - they do make a scary pterodactyl-swooping-out-of-the-sky-to-attack kind of sound when dive-bombing you. they can be hard to see, especially on a moon-less rainy night, so when you hear them start running and scan the signs for movement...
o you *will* get knocked off your dirt pillar/floating platform if that's how you choose to wait out the night. I'm not sure if they don't spawn at all or just don't attack you if there's a roof over your head; i may build a little shelter to test that out, or i may just wait until i get back home (i'm currently camped on a little island in the middle of the ocean, waiting for some turtle eggs to hatch)
o they do hit kind of hard - keep an eye on your hunger, and don't wander out in the middle of the night if you're not wearing decent armor! bows (and i guess tridents, although i don't have one yet) are more effective than swords/axes.
I won't say that the phantom won't have any effect on how I play - certainly, I'll have to think about the way I do things like night farming/gardening/fishing around my houses and villages, and i'll keep my bow wielded on over-night ocean voyages, and if i'm going to be staying in one spot overnight out in the open i'll dig a hobbit-hole or build a quick little shelter rather than pillaring up to a little floating platform - but I'm certainly not going to start sleeping through the night and missing all the fun!

Based on some information I found they only spawn if the player is above sea level and has a direct view of the sky so you can spend as much time as you like mining or place a (non-transparent, e.g. glass) block overhead at your AFK point and they will never bother you:
However, they ignore the hostile mob cap (which they do count towards) so an extreme number can accumulate (I presume Mojang will fix this, they even spawn for players in Creative mode, and while they may not attack they can become a big nuisance):

For me personally, I don't skip the night because I want to avoid dealing with them, I often skip because I'm focused on a single goal and night makes it difficult for other reasons besides just hostiles. Usually it is because I am building something and don't want to spam torches all around the building site so I can see, just to have to run around and break them when I am done. Especially on large or tall structures.
But I still want to encounter them in caves or the Nether or End, or just when I'm not focused on other stuff. Because they aren't a threat really, just a nuisance.

It can take several in-world days to get a sufficient mob grinder up, so you're not sleeping for a while, and forget AFK play, waiting for your crops or trees to grow, waiting on your iron farm to build up inventory in that hopper-connected chest you put at the end of it, etc. It's skyblock: there's nowhere to really hide. Even if you build a little house there in the sky, a crowd of dozens of the beasties will be waiting for you as soon as you open your front door if you do an extended AFK inside your house. I AFK'ed overnight once, and came back to a gaggle of about 3 dozen phantoms all dive-bombing my doors, fence-post "windows", etc; this was after a previous run where I forgot that phantoms were a thing and just plain AFKed as usual. The next morning when I returned to the keyboard, I was, of course, quite dead, and the phantoms were still there on every respawn. Thankfully I did not die with the bucket on me.
If you prefer skyblock-type maps as I do, the Phantoms are a very bad addition to the game. It would be nice if they could be turned off as a per-world config option without going full-blown Peaceful.

I love this mob. I play on hard, and local difficulty is normally 6.75. I have not updated my maps until the official release of course, and I do not know if it will raise that stat (not fully tested yet), but it does increasingly make it harder. I never sleep unless it is to set spawn. Thus, this will impact me greatly even though I am a ground dweller (i prefer caves as to building, I am a sculptor, not builder), but I do a lot of work outside as well. I prefer to explore via land, find places I like, then set up the portal network.
I still have not encountered one in the end yet, and that is the real challenge because of the lighting there, and the fact I am usually flying around by Elytra, so curious how that works out. I still have testing to do, but I love the challenge. Bed users, obviously have nothing to worry about. People who stay
underground, have nothing to worry about. The end, that is going to be the challenge for those that live there. In fact, I may have more bases there just so I have the challenge. Other than of course the one I have under the end portal in the end.
I really do wish they would have added all 4 of the mobs that were voted for, but with different updates in the order of popularity.

...and just to update this point, it seems that I just got "lucky" for a few nights after the first attack; not long after I posted the above (while I was still hanging around waiting for turtle eggs to hatch) I had a run of three nights in a row of multiple phantom attacks. No new phantom encounters yet since I updated to the latest snapshot.
The phantom is an interesting mob. It is still a new mob and Mojang is just getting started. Mojang may change the idea.

After five minecraft days not sleeping, two phantoms attack me.
After I beat them, eight leathers dropped.
That gives me one more reason for not sleeping at night.
Mojang gives us phantoms to get leathers faster than kill a cow.
