You see, each update that sounds awesome is just too good to be true. The recent updates haven't been anywhere near as good as they could have been.
Fun Fact: They actually removed the parrot-cookie thing, and are now using as an excuse to not add sharks.
Though it seems like this thread has a lot of support to you, to Mojang/Microsoft it does not. They could care less. They wouldn't mind if you stopped playing the game and never gave them another penny. The amount of people that have commented on this post is just a small fraction of those who are still playing the game and giving Microsoft money.

It has been confirmed that dolphins will not be able to be ridden, as it would be "animal cruelty."
Now, I'm not too upset at this not being a feature for dolphins, but the reasoning is doltish in the same way as the no shark reasoning.
I know for a fact that unless I see one in captivity, I will never, ever see a dolphin and even if I do under no circumstances will I think "OOOH I SHOULD RIDE IT LIEK IN MIMECRAPFT!".
Heck, under no circumstance would I see an actual IRL horse and ride it. (Those things are tall, man...)
Whoever is trying to block "cruel" gameplay features from making it into an already "environmentally cruel" game needs to be fired before they remove animal meat, having pets or riding other animals.
Heck, if your priority is animal cruelty, why is this more of a priority to you than any of those other things I mentioned?

The OP seems to ONLY have the video in it as a source, so I'm VERY skeptical about both, consideirng that I haven't found evidence of either.
I don't know about the shark one but the dolphin riding quote comes from the twitter of Maria Lemon (@MiaLem_n). Based on her tweets it looks as though she is one of the people working on the dolphins. It didn't seem like she was joking.

You know what? I just realized something, Terraria has sharks in their game. They've had sharks in their game for a long time now, and have no plans on getting rid of them even if they're an endangered species.
I feel like Mojang is trying to make us play Terraria. Can't really blame them; it's a great game.

It's worth noting Terraria is a teen-rated game. Still... I imagine we can find sharks you can slice to pieces or explode in other games with E10 or E ratings. (Maybe a Lego game? Maybe there's a creature similar to a Shark in a Mario or other Nintendo game? I dunno, but I don't really think killing endangered animals deserves a higher game rating than killing common animals.)

But then why add them at all?
The only other purpose I can see for dolphins is that they drop something useful, and that involves brutally murdering them. Is that a better situation than riding the dolphin and letting them live? (They could be ambient mobs like the Bat, but they seem a bit too big for that...)
That being said, I think sunperp would prefer us to stay on the topic of sharks, although in all honesty I think this conversation has been more about Mojang and Maria's bad justification for not adding features this whole time...
