I've been playing around with my favorite 1.12 seed in the snapshots. The landscape is essentially the same, but there are some minor but noticable changes. My spawn for example is a mesa with a river running through it. In 1.12, there was a significant cavern system with a natural entrance from the top of the spawn mesa, in the snapshots, they're gone, but I do now have a mineshaft system with a spider spawner at the one edge of the mesa (perfect now for a transit hub!) The river runs a bit more shallow in the one bend with the snapshots, closing to a 2 block wide stream at it's narrow point as compared to a 10 wid five deep river
The surrounding biomes had noticable changes as well but not landscape wise.... there's a LOT more villages. I also found one significant landscape change, at a desert/savana border, a ravine in 1.12 is now a relatively slim single savana platue nearly to build limit with two ravines running off it at angles just underground. There rare now three desert villages within a few chunks of that spire (yeah... something getting built there).
The oceans are relatively the same, although with sections now full of the new aquatic assets.... how much of which depending on the particular snapshot of course. There are also 3 additional sea temples in my seed with the snapshots.
Both 1.12 and snapshots done with default settings btw.
Edit.... looking forward to the next snapshot tho.... dang the current one is unstable. It's making it hard to find all these new villages and other building type features
Spring and original promised GA date has come and gone. Seems to me after playing all these snapshots that some efforts and time were wasted getting to the main GA release with non-aquatic enhancements. Personally, I would have preferred they worry about some of the little things later in incremental releases. After all, who will care otherwise after they push such a large update anyway?
BTW, nothing like running the latest snapshot either. At least with 15a and the Drowned, that was just a bummer once you encountered it but now, it's like coming home to a world that never existed - except its the same map somewhat and you have everything on you to prove you were there! I mean, there's no way I would bother to keep playing 1.12 all this time, even with mods. My son rarely plays anymore on consoles as nothing has really changed in quite some time.
When will it be released? do somebody know? cuz I am really excirted about this!
Once pre-releases start coming (which might even happen this week) you can be sure full release is getting soon, although even when the first pre-release comes out, it could still be many weeks until actual release. For example, when the first 1.12 pre-release came it wasn't until almost a month later that the full 1.12 release came.

Considering things like dolphin behavior, the ability to place lava in blocks, and the new fluids engine Dinnerbone showed still haven't been added, i doubt pre-releases will start this week.

Nautilus shell is used to craft a conduit (probably good to mention since other new items list uses on this post).
Heart of the sea can be obtained in java edition now (has been available for some time), they spawn in stacks of one in all buried treasure chests.
Conduit range can be extended to 96 blocks by completing the structure around it, also we do know how it functions now.
Photos of icebergs are available and should probably be added. Also it should be mentioned that they spawn in frozen oceans now.
It is probably worth mentioning that there are two different types of underwater ruins dependent on ocean temperature. Also, the buried treasure map will spawn in some loot chests in the underwater ruins.

That just means 18w21b was the most recent one released, not the last one that is going to be released. No one on the wiki knows when 1.13 will be released.

A few more things have changed in the last few snapshots/prerelease:
Bark blocks now have a separate texture on the top and bottom, they no longer use the same texture on all sides.
LadyAgnes confirmed (tweet) that Packed ice will be craftable using regular ice in the next prerelease (1.13 pre-2), meaning it is now a renewable resource along with blue ice.

I think the new top textures of the bark blocks look kinda nice but I do agree they shouldn't replace the bark block. They should instead add some sort of "chiseled bark block" or something or maybe when you right-click a bark block with an axe it gets the new top texture

This update has got to be one of the biggest updates that Minecraft will ever receive! Who's excited?!

That happened to me too. It's a bug that is also the reason why cartographer villagers probably won't sell any explorer maps.
