I've been out of the loop with MC updates for a while, and now you can apparently "unlock" recipes? Does this affect crafting at all or does this just put it in your recipe book? For example, say I don't officially know the recipe for a sticky piston, but I know how to craft it because I've played Minecraft for years. If I get the stuff to make it, can I still make it or do I have to go unlock it somehow?

If you have the stuff to craft something, you immediately unlock the recipe. But if the recipe is taken from your recipe book via commands, that shouldn't actually affect if you can craft it or not. It just affects what's in your recipe book.

To download the other ones you need to make a folder in the versions folder for minecraft and put the client and JSON file for the versions in there. They all need to be named the same aside from file extensions. Once you do that, you will be able to choose that version when making a new profile with the minecraft launcher.
