I was in playing in a survival world to see all the new advancement system and the parrots.
While i was near a cave, in the surface, with my parrot, i heard a hissing noise, the same of the creeper but higher pitched and it scared me as i didn't expect a creeper. I looked around and, indeed, there was nothing.
I ended up entering the cave and there it was! A pack of creepers waiting for me. I heard about the mimicking of this new mob so I immediately thought of using a parrot as a companion to alert you from those sneaky creepers (except the ninjas that fall from the top of ravines).
Of course a cat can make a better work, keeping the creepers away; but they can't fly and they don't dance.
A minigame I thought of would be using a parrot to alert you from a nearby mob that you can't see due to blindness effect. maybe near pressure plates or tripwires, you must use the sounds to know where not to step. I tested this with the tags: "No AI", "frozen" and "silent" for a zombie. The parrot was able to mimic it but the zombie didn't make any sounds.
It's a bit more than just a decoration mob. it's not super useful, but it can help a little.
Edit: I've tested with a silent ghast and... oh boy! I instantly got that feeling of the "Angry birds" game.
It's been stated that the mimic of the witch also makes a sound like an angry bird. Well, the ghast mimicry is like when you launch the birds!
While the fact that it can alert you to mobs is neat as well as its ability to dance, I think there is 3 major drawbacks to the parrots.
The first one you said yourself. If you happen to just pass over a cave below you you might hear a sound that scares the heck out of you but you arent in any danger.
The second is that the parrot can only mimic one mob at a time. What if it mimics a zombie so you say "i got this" just as a creeper comes from behind?
The third is that the parrot leaves your shoulder every single time you jump. It's really annoying. If they just changed this one, I could probably get used to the two drawbacks above.
Honestly, even if they didn't mimic sounds I'd say they do their use well enough as atmospheric. If they remove the dismounting when you jump that'd be a nice improvement so I can move about and explore, or visit a friend's place with a parrot on my shoulder.
I for one like having a companion that can actually keep up with you and not die all the time. Since they fly they don't take fall damage, they are really small and don't suffocate anywhere after teleporting, and they can be put on your shoulder of course.
It is annoying that they fly off after you jump, but on the bright side they seem to fly towards you and go back on anyway.
Did they fix parrots so you can tell them to stay? Last I saw, they would still teleport to you (breaking leads and warping out of cages) and you really couldn't get away from them. This meant that they could get caught in sweeping sword attacks when you were intending to swing at hostiles.

I collected a whole bunch of parrots before the mob cap was adjusted and I periodically go back for more. one thing I like is that they hover around other mobs, there were a few times I noticed a clump of them off in the distance and upon investigation, turns out a creeper or similar was lurking about and the parrots had mobbed it like when crows harass predators on the ground.
maybe they should have made them crows or ravens instead...

There was another nearby, but by the time I'd tamed this little guy it was gone. (anyone know if they're going to make them breedable?)
Their skeleton impression is kind of fun; it sounds like you're under attack. Haven't heard any creepers yet...

They can dance! That is the reason I will be collecting them. To make this big house with a jukebox and parrots.
