Being in Survival, is there a way to be able to AFK XP like the old ways or not?
Not without commands. You can use commands (open up a LAN session to enable commands temporarily -- they'll be disabled again next time you play but any changes you made will remain) to disable cramming damage with the command:
/gamerule maxEntityCramming 0
If that's too "cheaty" for you, then you'll either have to redesign your collection area to hold more mobs (in a larger area) or else kill them all every time they pile up past 24 to make room for the next batch.
I recommend an enderman XP farm. It's an active-use farm, no AFK'ing necessary as they will spawn faster than you can kill them. Go there, use it, leave. Done. No nasty sitting there for an hour doing nothing while they all pile up from a dungeon spawner.
Well I had an enderman farm, but it broke a while back and I never went around to trying to figure out a new way to make one.
Since they wont spawn on pressure plates that farm has been out of use!
Sad day over here!
Mine doesn't work as well as it used to, either (I made one of the tripwire versions, so it does still work, just not very well. But since it's not entirely dead, I've been pretty lazy about doing anything about it.) But the new ones are super-simple. One of these days I gotta get around to making something like this:
I just built Etho's Ender Ender 3.0. Not hard at all, you can build the spawn platform much smaller than he made it and still get good results (I think mine is 17 block in diameter, maybe I'll go back and make it a little bigger one of these days, but nowhere near as big as his), by making the drop channel three blocks wide instead of one block wide you can deal with the suffocation issue, and works like a charm.

Yeah. For a brief moment there I thought "just call it 'automatic ender pearl mode' (and just swing a sword occasionally for XP)" but honestly I have more ender pearls than I know what to do with already, I can't really ever see myself wanting to just go get a metric ton of them and not want the XP for some reason. And that sound could get pretty hellish if I'm there enchanting or anvilling things for any amount of time...
Simple solution: I made my mob farm collection area wider. Instead of 1 block, I have the drop zone and 3 more spaces for them to spread out. 4 x 25 = 100 max. mobs in my farm.
This gamerule was seriously needed. I've been on many servers where someone went afk and created nearly 1000 mobs, seriously lagging the server. In my own world, I accidentally left a chicken breeder on and crashed the server at 1200 chickens.

I read the wiki page for the 1.11 and came across the new gamerule about cramming.
And I think that's becoming a problem for me at my farm.
I can't really AFK because Im getting 24 or 25 then as more falls one dies to cap it off there.

You think magic isn't real? Consider this: for every person, there is a sentence -- a series of words -- which has the power to destroy them.

You beat me to it, I was just about to suggest Etho's design, which is incredibly efficient and easy to build.
