I don't think people play in second person much except to show off to a video or stream or to test out features and their looks.
Third person, though, I can imagine some people prefer on certain consoles because of a different perspective on the area by the player, their hitbox, and the ability to see creepers and the like creeping up on you.

In fact I should try it myself because it might save me headaches from creepers, however it makes aiming at specific blocks harder so maybe not in caves (plus the perspective camera moves really wonkily when you have obstacles blocking the line of vision).
