I mean I have seen minecraft update but still, it's just a shell of it's former self, every time I try to play the game on a survival server for more than a week I feel more and more empty every minute. C'mon mojang (or should I say microsoft), I just wish for the old minecraft, the minecraft where the best y level to mine at was level 11, a minecraft where you didn't have to worry about food, a minecraft where you build stone buildings instead of the complicated 3-types-of-wood-buildings.
I know I sound weird and stupid (I'm pretty sure that I am stupid) but hear me out, I feel a constant sadness over all games I used to watch/play, I wish notch would join back to the minecraft team and bring back the unique yet simple biomes.
C'mon mojang! bring back notch, bring back the minecraft people bought with excitement. Bring back the good times where real survival server where all we ever played.

Yes, that is still entirely accurate to this day (1.6.4 is just 1.6.2 with saving of structures so things like witch huts still spawn mobs when updating to 1.7, which is irrelevant to me); I've also gone off to basically updating the game myself by making my own mods (as described in more details in "why do I still play in 1.6.4" the entire progression that led to me never updating was a combination of not liking changes and not being interested in features in newer updates and my own modding ability; why update when I can add whatever I like).
I have added some things from newer versions but mainly for fun (I even added glow squid, a much-hated feature that somehow won a mob vote, just because I thought they looked interesting and made the world livelier (a lack of mobs is often cited as an issue with the game, but at the same time people complain that they don't have enough purpose) and only needed a few lines of code and a texture, so why not?). I don't actually need much to enjoy the game, as evidenced by the fact that my first world remains by far my most-played world, with just various minor additions and bugfixes.
Others have been similarly inspired to make their own "vision" of the game due to dislike of newer features; the most classic example being "Better Than Wolves", so-named because the developer thought that wolves, added in Beta 1.4, were completely pointless addition (they did update the base game to 1.5.2 before staying on it but it completely overhauls the entire game, the only reason I might ever update is to take advantage of newer/better supported game libraries/OpenGL but the core game would be replaced (so really just backporting the front-end rendering/IO code).
People are even still making mods for Alpha and Beta versions that expand the game in their preferred direction, or just add some features to improve gameplay, including some from newer versions (such as the ability to shift-click items to/from inventories) and there is an entire subreddit dedicated to such old versions, r/GoldenAgeMinecraft (unfortunately, they dislike anything after 1.2.5 because "the internal server destroyed singleplayer") and when combined with everybody abandoning the forums I've been very hard-pressed to find any good discussion for the versions I like).
However, most people will not be satisfied if they do go back, whether singleplayer or multiplayer (yes, you can find servers for versions even as old as Alpha and Beta) since what they are really missing is the feeling of playing the game for the very first time, without knowing anything about it and discovering everything for themselves - you just can't get that back (unless you somehow lost your memory); it is important to note that I do not still play on 1.6.4 because of this as I've never updated to newer versions (for me it is the community that has died; you wouldn't believe how active these forums used to be 8-9 years ago; "Most users online: 34,329 (Sep 25, 2014); Online Users: 28" - that's a 1,000-fold difference, and probably 10x that in actual activity, excluding the server/support sections).
There are still active servers around on Alpha and Beta servers, and mods made for these older versions for a fresh experience, I mainly play beta 1.7 and the BTA mod, ive never gone past 1.16.5

I ignore new up(!)dates because starting of first ruining up(!)dates 14w25a and 15w33c, the game is gradually getting ruined and everything is going worse (14w25a, ruined item and block data handling. 15w33c, ruined combat, 1.14, ruined textures, 1.19.1, ruined the free speech in the servers and an oppressive chat report system was implemented). Now everybody should understand why Minecraft can not gain its old popularity furthermore something even worse may happen (if Roblox, Minetest etc. replaces Minecraft). But we have a choice which not updating to new versions and is archiving old versions, which would revive old, unruined versions of Minecraft.
I made a mod to manually register technical blocks, somebody made a mod to disable chat reporting... Mods may save the Minecraft community from bad up(!)dates.

Before I go on to say anything, I would like to clarify that I am not happy with the more recent updates either but I do think there are some things to consider when looking at the state of the game.
This may be obvious but I think it's worth mentioning that our personal preferences greatly impact our perception of the game. Updates have been a source of disagreement from the very beginning. As Minecraft continues to be updated it will either get closer to or further away from each person's particular hopes and expectations for it, and will probably be moving in the exact opposite direction for somebody else, or maybe even for the majority of players. Many of the features currently in place have been viewed as negative changes by people in the past whether they've explicitly said so or not.
I have personally disliked the addition of more real world animals to the game, but I am aware that the same type of player that would've used Dr.Zhark's mo' creatures mod back in the day must've been happy to have them.
Creative mode is something I think so little about that it might as well not exist for me. However, it has been a great addition for those looking to build without going through the process of gathering resources. Not everyone was happy with it back when it was first introduced though.
The hunger bar is one of the reasons I was drawn back into Minecraft after I'd decided it just wasn't the game for me, and (as you must very well know) it was also a highly disputed addition to the game.
The changes to terrain generation, biome variety, the nether, the introduction of piglins, villager trades, totems of undying, elytras, treasure maps, the number of blocks, and even the game's textures may have played a role in improving or worsening your Minecraft experience. The game is so open-ended that it will appeal to many different kinds people for many different reasons. What is at core of one person's enjoyment won't always match with everyone else's. A player whose main source of entertainment is the construction of complex redstone mechanisms will likely have some very different preferences to someone that's mainly looking to explore different biomes and dimensions.
Take a look at the outcomes to Mojang's Mob votes in the last few years. The impression one might get from listening to Minecraft content creators is that the only community favorite to ever come out on top has been the allay. I've even heard the statement that "A majority of players wanted X" instead.
While there's a discussion to be had about the kind of content that Mojang chooses to put forth for the players to vote on, what I want to focus on are the seemingly unexpected results of letting players voice their preferences. We all have a very clear picture of the things we most enjoy about the game and where we want it to go moving forward. I do believe that most of us intersect on many points but I suspect that if any single one of us got our way, the rest of the community would not be very happy with the outcome.
