When you craft something, it's instant. You click and get the item you want instantly. Why isn't it like that for everything else? Smelting, why isn't it instant? Brewing, why isn't it instant like crafting? How does this "wasted" time help the gameplay? Is it NECESSARY that these actions take time? Would it be so game breaking if the player was able to get 64 iron ingots instantly after putting the raw iron in a furnace with fuel?
If you answer no, please explain it in the comments. I would love to read it.
Crafting is actually the outlier as all(?) the other processes in teh game by which a player obtains resources imposed a time component.
MC (at least the original concept of survival mode) is/was fundamentally about resource management; one builds 'things' by acquiring and expending resources. Were all resources available instantaneously the result would be approximated by creative mode.
Were there a viable way to represent the time requirements for crafting items, it would probably have been added. [When the recipe book and shift-click to craft all was introduced in 1.12, one of the objections made by some members of the player community is that it made crafting too fast and too easy.

MC would still exist but would be vastly changed [& not for the better IMO]; how much so would depend on how far this was taken eg should crops and trees grow immediately on planting, animals be birthed full grown, should obsidian require more breaking time than netherrack?

WARNING: I have an extemely "grindy" playstyle; YMMV — if this doesn't seem fun to you, mine what you can from it & bin the rest.
Considering how time is only relevant during fights (the only thing that you must react to in real time) it seems pointless having to wait for what is just a different way to craft things, also because the real cost of smelting/brewing is fuel and there's really no reason to put one more. It's probably just one of the many features that are there because it's "realistic", no matter how many people think MC never was intended to be (by cherry picking examples).
If you set up some complicated redstone, you could make it so that hoppers put only one item at a time to smelt in each furnace. You could place all your items you'd need to smelt in one chest, and then watch it smelt 10 or 50 times faster. That's the main problem though; you need to make relatively complicated redstone just so that one hopper doesn't take 5 stacks of items at once. All in all I don't think the smelting delay should be removed, but a new type of redstone block which acts as a hopper and transfers one item at a time would be very useful; helping players easily solve problems like these.
I would vote B. Minecraft is a game of engagement. As ScotsMiser stated; making everything instant is effectively Creative Mode. Enjoy the process. Go plant a tree or make a trade. Your iron will be smelted when you return.
