I know it's possible to farm Ender Pearls without killing the mobs (Mumbo Jumbo's design) but I can't find any copper farms that don't require killing the mob by player action. I know the rates won't be as good but I'd rather not need to use an autoclicker etc to run the farm while away from the PC.

As far as I know, it's not really possible.
There are only two ways of obtaining large quantities of copper - first one is mining and smelting its ore, and second is manually killing Drowned.
If you need a workable and efficient copper farm - it's possible by drowning zombies from traditional mob grinder in water and then killing them by the player, but the grinder won't yield any copper if you fully automate it.
Theoretically you could also set up a massive slimeblock-based tunnel bore drill with automatic collection, breaking and smelting systems, but firstly it's not very efficient copper production method and secondly setting it up would take up nearly unimaginable amount of effort and resources.

Slimeblock drills can be fairly compact and require only moderate amounts of resources.
They nonetheless don't produce a lot of specific resource and just whatever drill smashes into.
If you can put yourself into some built-in cauldron or composter inside the drill it will be immune to getting out of rendering range, too, as long as you volunteer to sit inside all the time.
You could make your own using drowned. I would try on the air soul sand for water to move them up
Drowned drop copper only when killed manually, and he asks for a farm that needs no player imput to work.
