there isn't much point in crafting a hoe beyond stone because they all do the same thing, just with different durability ratings.
It is true that netherite hoes are immune to fire/lava, but just precisely how would you have a problem with lava while you were harvesting crops? players don't normally place their farmlands nearby a lava pool.
I just crafted mine for the fun of it, but I must admit looking cool isn't always a good reason to make something.
Stone hoes are most efficient because they are renewable, more durable than wood, and they are easy to obtain.
I still wouldn't consider the gold hoe the most useless item though,
poisonous potato imo is, followed by curse enchantments.
During my first days playing minecraft i also used to think those stone varients where useless bc you can't craft tools from them.
At that time i wasn't into building anything better then houses made from just oak planks.
(Altough my first non dirthouse burned down bc i thought it would be cool to have a glass floor with lava underneath it)
Nowdays i still can't make use of diorite but i realy appriciate polished granite and andersite. Polished granite is a beautiful block for floors.
I use polished andersite, anvils ect to create decorative smithing workshops. Wouldn't look good with only workstations.
Sometimes you need a block that fits in with the colour palette your working with. And that's polished andersite for me.
I would support having more practical uses for diorite and andesite etc being added later on however.
I don't know any off the top of my head but there's probably some alternative uses that could be added for them in future.

I find that interesting. I was born in 1990 and started watching horrormovies for adults when i was 8 years old.
In germany you become adult at 18, not 21. Anyway, i consumed a lot of content from the horror genre. When i was joung, i enjoyed that a lot.
Nowdays i feel like i have seen everything. I can barely give any positive feedback to horrormovies.
During 2000 we had this "zombie wave" in german tv. That was of corse a lot of hollywood and other countrys productions.
(Yes i know that hollywood isn't a country) I don't know of a single german horrormovie. However the horror genre became boring to me at that point. That's when i startet investigating norse mythology and the fantasy genre.
The most useless feature should be judged by what it does for the game and whether or not it does what it was intended to do.
Poisonous potato has no benefits whatsoever, all other food sources besides spider eye and pufferfish, are superior.
And you can't even compost poisonous potato
furthermore, it is not a decorative block, so has no use for that purpose either.
You could put it on item frames, but why would you? it's not something that most players would even consider doing,
because it doesn't even have an aesthetically pleasing look with its default texture.

All of these stone variants- andesite, diorite, granite, etc. etc. They don’t have any use besides for variety/decoration!
(I’m sure some features are much worse but that is the first thing that comes to mind.)

Eh-hem… All (or maybe the vast majority of) Minecraft features have a use, these are just the most useless ones.
That depends on how or if you can make use of them.
For example:
I turned out to become an overworld nomad, since playing from the aquatic update.
In my case i have more use for polished granite & andersite then for the dragon egg,
shulker boxes or the elytra, even though i barely stopp to build a house or something.
What about prismarine blocks? I, as a nomad never build a farm to gather those blocks.
You can't craft anything useful from them. Now don't give me the sea lanterns as a counter agrument. I like them too.
From a strategical point there is no reason to open up this ressource compared to jack o lanterns, which are completely renewable.
It realy depends on your taste for blocks. Stone isn't rare and those stone variants won't make your life harder.
But they make my houses more comfortable.
