I have never come across it because it never occurred to me to try such a weird way to travel. However, I don't have any objection to it. Why shouldn't you be able to put a boat in a minecart and sit in the boat?

Sitting on a horse,
wich is sitting in a boat,
wich is driving the rollercoaster tycoon!

For now i'm working on a private modpack that suit's my own playstyle.
I am gonna stay in modded 1.12.2 untill my potato dies. No mercy! :Q
