when I first started playing Minecraft I was one of the people who knew full well updates were going to add more content to the game as time went on, and it did, for better or worse. In fact I think more building materials, animals and passive and neutral mobs added to the game would be nice, it's not like they would prevent you from playing the game the old fashioned way. We still have Endermen, Spiders, Skeletons and Creepers, the classic hostile and neutral mobs.
I'm pretty sure the game is becoming more complex because the vast majority of users are eager for new content. I assume this because if it weren't the case, it would be cheaper for the manufacturer not to do any development work on the product.
If you want to play an old version of the game, you are free to do so if you have the Java version. That is one of the major advantages of Java Minecraft for fans of older versions.
Frankly one of my most favorite worlds is created with a seed that I first played in about Java Release 1.2.
I'm currently playing it in Release 1.6.4. Which is the last release before the way seeds create worlds changed.
Before Release 1.7.2 caves were more numerous, Ravines were deeper. I really like caving.

u can always play the old versions if u don't like it now.. the way i see it, i prefer new stuff, learning about it and play in new ways, than to have limited things to do. of course minecraft is limitless, even in the old versions. now i think the game is better, even if it is complex, every time u learn something new, u expand ur horizons. i think u need to adapt to what minecraft has become, and start having fun again, now with new features.

1.13: Added Tridents, which are like bows but inconvenient - added a bunch of structures that are useful in the early game, but are completely optional after that. If you see a weird zombie with a trident, run.
1.14: Villagers trade better now. They have to be near a bed and a workstation or they won't do much. They sell different things depending on what workstation is nearby. Here are the important trades:
-Fletchers sell arrows and buy sticks
-Masons buy clay
-Armorers sell diamond armor
-Toolsmiths sell diamond tools
-Weaponsmiths sell diamond axes and swords
-Clerics sell ender pearls, sometimes.
-Farmers buy melons and pumpkins.
If you right click a zombie villager with a splash potion of weakness, then a golden apple, it gives you discounts on everything.
1.15: Added bees, which are useless to everyone except Mumbo Jumbo.
1.16: Nether is cool now. Warped Forest has lots of enderman, Crimson forest has piglins and hoglins, stay far away from the basalt deltas and soul sand vallies. There's gold there too, which is nice. Piglins give you stuff if you give them gold, wear gold boots in the nether. You can turn diamond stuff into netherite stuff with 4 ancient debris. The best y level for debris mining is Y = 15. Bed explosions get you lots of ancient debris. Always carry a fire resistance potion. There are bastions, which have lots of gold and nothing else useful.
1.17: It's not out yet, but it's a mountain update.

I started playing when Pocket Edition Beta was a thing and to help out with this issue, I find it easy reading the change logs and watching videos on the new updates. Even read the wiki articles, and hell, explore on your own. Everyday I find new things about the game, like Blocks having their own Cords from XYZ Cords, take time in exploring and it will become more easier for you. Hope this helps.
There has been no change to the structure or even frequency of ravines since they were added in Beta 1.8, as this comparison between 1.6.4 and 1.7.2 shows - in fact, even though they appear to be different they actually start at the exact same coordinates (notice that one end is always in the same location), only differing in the directions they curve in afterwards (this is also why some appear to change in depth as they also have a smaller amount of vertical curvature):
Likewise, while their locations also changed in 1.13 they are otherwise still the same as since they were added (the change in 1.7.2 is due to a change in the RNG sequence while tracing out the ravine due to changing the size of the "wall noise" array from 128 to 256, presumably since terrain could now go to 256 instead of 128, despite ravines not taking advantage of it (a similar change also explains why dungeons are much less common in 1.7+), while in 1.13 is it due to changing the chance from "nextInt(50) == 0" to "nextFloat() < 0.02F", which give the same probability but operate on different bits from the underlying RNG).
That said, my solution to newer updates was to simply not update and create my own updates, aka mods - everybody always wants a cave update but I made my own, and undoubtedly much better than anything Mojang might make (especially if all they do is add some new cave decorations, mobs, etc without actually changing caves, which I should also note still can't properly be customized). Terrain and biomes are also vastly better than any vanilla version (of course, as I see them; others would find the amount of caves, or deserts next to snowy biomes, or weird landforms and floating islands to be objectionable).
If only there was a mod such that you have only the older features but the newer UI (e.g. new villager trades, new inventory system and crafting book + search-bar) and maybe making it so boats don't break on contact with land at high speeds.
Shouldn't need a mod or cheats to disable features in updates tho
this is a sandbox game, and some of these updates do feel forced on us
and people who play bedrock edition do not have the option to just use a launcher to revert to an older iteration of the game.
Java players have it better than us though, they can ignore changes in the game at a whim and it doesn't affect them,

The only time ravines would be a problem for me now is if sand collapsed underneath me in a desert while I wasn't wearing Feather Falling enchanted boots, and you'd have to be very unlucky for that to happen. I used to get in trouble with ravines years ago but I've been more careful ever since.
Whether they go to Y 30 or lower, they're still going to kill you unless you land in water or have enchanted armour.
I have a cobblestone factory which by design including the warehouse rooms above it and the wood farm on top, if you jump off the roof it can get you down to about 2 hearts of health and it is only around 17 blocks high.
Overworld terrain appears to average at about 69 Y, I could be wrong but this is my experience with it.
This is the reason why this is my preferred altitude to level terrain, makes the job easier.
But ravines would most certainly instant kill you unless you either got lucky, deliberately jumped in a pool of water, or used a bucket of water to use a stream to safely lower you down. You'd get away with it if you were wearing enchanted armour, but monsters at the bottom could still finish you off.

But sometimes we need to inform people to adapt to change, some of us who started playing the game knew the updates would be changing it in time and some of us don't believe Minecraft had enough content, look I got nothing against Alpha version players or similar, but they need to understand that not everyone wishes the game to remain static and too simple.
I'm fine with more content being added if it means improving the experience for everyone, some changes should become a world option and even non cheat related, I don't agree with all the suggestions being put out, but those people are entitled to their opinion, the same as we are and I think more content did improve the game for most people.
I just don't believe it is a fair assessment to say the game feels like "modded", because of the new content that got added to the game.
Some mods are fundamentally broken and can grant you invincibility or close to it, especially the superheroes mod with Wolverine, then there is the potential copyright lawsuits they could be subjected to if they happen to use ideas from other people.
Mojang have added questionable updates, sure, but what they put out is official, the game is not our IP, it's theirs and Microsofts, we don't work for them.
I do think some updates should be optional, though.

I dislike googling in the dark for things that other people tell me about. I don't know exactly what I'm looking for or where. Esp. if it's obscure or old or there is contradicting info. Not in this case but in general. It's also a nice thing to do, to source your stuff. Please don't be fussy about it like an Anon.
It's the burden of the person who shares the information to source it because they already found it anyway, so it should be easy for them, not to mention that when you claim something in general, you need to back it up. Putting the burden of proof on me is no different than asking accused in court to prove themselves innocent - the expectation is that if you suggest something, you explain why because the norm is that things are as they were before.
Asking me to research is the same as assuming that because someone says something, the world flips on its head and you have to flip it back to normal without knowing how it was turned. Then anyone can claim anything and the listeners are given the responsibility to research just as a consequence of hearing the information - a responsibility they did not ask for or accept! Because we as a society don't believe in randomly giving people work they didn't ask for, we make it so that the person who gives the orders or information does the work, since they took the initiative to speak to begin with (and thus accepted the responsibility of proving what they say if needed).

Unfortunately anyone's opinion is worth nothing to a multimillion sales product and its company. They follow the economic trend and we follow them. The burden is on us here to convince them why their changes should be made optional or otherwise modified, not theirs. They are loyal to the cash flow, only we are loyal to the product.

Humans being drawn to war is because people with a lack of empathy are better able to manipulate and lead due to lacking empathy.
Average people do not want war if they are fed and happy.
In any case, I don't feel attacked that much. It's okay.
Interesting details on the pickaxes although I would never get far enough to use beacons in regular mining. Differences seem small but may be relevant to some people.
Piglins are definitely useful and I only wish brutes were not in bastions, or that hitting them would not anger normal piglins. It seems pointless to me to have piglins be neutralized when brutes exist as they are.

The only time ravines would be a problem for me now is if sand collapsed underneath me in a desert while I wasn't wearing Feather Falling enchanted boots, and you'd have to be very unlucky for that to happen. I used to get in trouble with ravines years ago but I've been more careful ever since.
Whether they go to Y 30 or lower, they're still going to kill you unless you land in water or have enchanted armour.
I have a cobblestone factory which by design including the warehouse rooms above it and the wood farm on top, if you jump off the roof it can get you down to about 2 hearts of health and it is only around 17 blocks high.
Overworld terrain appears to average at about 69 Y, I could be wrong but this is my experience with it.
This is the reason why this is my preferred altitude to level terrain, makes the job easier.
But ravines would most certainly instant kill you unless you either got lucky, deliberately jumped in a pool of water, or used a bucket of water to use a stream to safely lower you down. You'd get away with it if you were wearing enchanted armour, but monsters at the bottom could still finish you off.

Also "only if you know what's going on" isn't a very effective way to help OP. I was once very confused by this game and a lot of it still confuses me.
Can confirm this happens to me too. TMC is always right about this stuff.
But sometimes we need to inform people to adapt to change, some of us who started playing the game knew the updates would be changing it in time and some of us don't believe Minecraft had enough content, look I got nothing against Alpha version players or similar, but they need to understand that not everyone wishes the game to remain static and too simple.
I'm fine with more content being added if it means improving the experience for everyone, some changes should become a world option and even non cheat related, I don't agree with all the suggestions being put out, but those people are entitled to their opinion, the same as we are and I think more content did improve the game for most people.
I just don't believe it is a fair assessment to say the game feels like "modded", because of the new content that got added to the game.
Some mods are fundamentally broken and can grant you invincibility or close to it, especially the superheroes mod with Wolverine, then there is the potential copyright lawsuits they could be subjected to if they happen to use ideas from other people.
Mojang have added questionable updates, sure, but what they put out is official, the game is not our IP, it's theirs and Microsofts, we don't work for them.
I do think some updates should be optional, though.

I dislike googling in the dark for things that other people tell me about. I don't know exactly what I'm looking for or where. Esp. if it's obscure or old or there is contradicting info. Not in this case but in general. It's also a nice thing to do, to source your stuff. Please don't be fussy about it like an Anon.
It's the burden of the person who shares the information to source it because they already found it anyway, so it should be easy for them, not to mention that when you claim something in general, you need to back it up. Putting the burden of proof on me is no different than asking accused in court to prove themselves innocent - the expectation is that if you suggest something, you explain why because the norm is that things are as they were before.
Asking me to research is the same as assuming that because someone says something, the world flips on its head and you have to flip it back to normal without knowing how it was turned. Then anyone can claim anything and the listeners are given the responsibility to research just as a consequence of hearing the information - a responsibility they did not ask for or accept! Because we as a society don't believe in randomly giving people work they didn't ask for, we make it so that the person who gives the orders or information does the work, since they took the initiative to speak to begin with (and thus accepted the responsibility of proving what they say if needed).
Unfortunately anyone's opinion is worth nothing to a multimillion sales product and its company. They follow the economic trend and we follow them. The burden is on us here to convince them why their changes should be made optional or otherwise modified, not theirs. They are loyal to the cash flow, only we are loyal to the product.
It's also worth noting:
1) This source doesn't claim 1.17 is a mountain update, it claims mountain biomes will be changed in the next update. Precision (in this case, of size/scale) is important. You have to realize the effect of your claim: people who wanted an End or Cave update etc may be upset to hear 1.17 only does mountains. People who wanted a Mountains update may be disappointed it is not the only or even main thing happening in 1.17.
You need to specify that it is just one feature coming and not guaranteed to be the main or only such feature.
For people who cannot keep up, these details may mean choosing to abandon the game.
2) I only questioned you once and it was easy for you to answer, because you knew where to look. This isn't "cracking", because you are not in any way obligated to hide the information other than by your own choices with your own personal reasons. The modern attitude many people have of "owning and protecting" information from others is unhealthy and puts too much burden on the individual, particularly less capable individuals.
Of course, I'm not surprised, because we live in a highly individualistic and cosmopolitan world today where everyone is assumed to be capable, willing, and responsible for their own information, much in thanks to corporations and the influences they have on our lives including gaming. Many people feel that giving away information is "spoon-feeding" and causes people to become dependent or lazy, or costs the information provider their ego or a trade secret. These feelings are a consequence of modern society - we are by history and natural human behaviour intended to collaborate, not fight and compete like that. I'm sorry if this is uncomfortable. It for sure is off-topic though.
We can still have obligations and choose to ignore them, even if he was morally obliged to inform you that wouldn't make him your slave, or anyone's.
But I agree, individualism encourages people to not be helpful.
Of course there is a lot of information easily accessed on Google, but not everything is, and we cannot predict the future with 100% certainty so our only hope is to ask experts for advise, or research it ourselves. But whatever happens it is called life, if Mojang doesn't want to introduce the cave update then we cannot force them to, and it does suck that there is no cave update coming yet, or any expansion to the depth of the ground, removing the 256 Y limitation would be useful for updates like the cave update, and higher mountains.
I'm sorry that I assumed you were capable, willing, and responsible enough to google. In all honesty, the reason I didn't respond with the link in my first post was because I assumed it would be easier for you to google a topic than it would be for me to google a topic, copy the link, and attach it through the minecraft forums.

In all seriousness, I'd like to believe that I'm less susceptible to the influences ads have on us. I've recently started to look away whenever an ad, even a 5 second one, comes onto youtube. At this point, I'm afraid this has come to be more of an attack on you than a discussion of op's concern, so I'm going to mix some relevant information in.
-Netherite's least useful feature is the boost to actual direct defense and efficiency it has. A netherite pickaxe with efficiency 4 is slower than a diamond pickaxe with efficiency 5 (source is try mining with a haste 2 beacon efficiency 4 netherite pickaxe vs a haste 2 beacon diamond pickaxe efficiency 5).
-Piglins have many trades that are useful in bulk, but they are less dignified than villagers, and will throw a random item from their list when given a gold ingot. These drops include iron and obsidian, used to get a new nether portal if you're lost, enderpearls, fire resistance potions, leather, an enchantment which lets you move really fast on soul sand (faster than normal running speed on regular blocks), string, and assorted other useless things.
That first line is ultimately the main dilemna of all of civilization. If nobody owes anyone anything, law of the jungle persists. If everyone owes everyone, is there any time left for oneself?

Humans being drawn to war is because people with a lack of empathy are better able to manipulate and lead due to lacking empathy.
Average people do not want war if they are fed and happy.
In any case, I don't feel attacked that much. It's okay.
Interesting details on the pickaxes although I would never get far enough to use beacons in regular mining. Differences seem small but may be relevant to some people.
Piglins are definitely useful and I only wish brutes were not in bastions, or that hitting them would not anger normal piglins. It seems pointless to me to have piglins be neutralized when brutes exist as they are.
