As afar as big youtubers, I used to watch the yogscast a lot back when they did minecraft, these days I mostly only watch grian's stuff but sometimes I'll watch some of the other hermits.
For the most part though, I prefer watching smaller building channels for inspiration; klautos, lord dakr, pearlescentmoon, and I wish madnes64 would start uploading again - I really liked the city he was building.
I don't really watch Minecraft content on YouTube these days, but I think the sort of stuff I do used to watch sort of fell out of favor a bit? I mostly watched in 2012 and 2013, and maybe some of 2014, when Minecraft animations and song parodies were the big thing, and some of the showcase videos (showcasing custom maps, showing them off in shader glory before they were commonplace) caught my attention too. As far as I know, these are still probably things, as Minecraft IS one of the biggest games, but browsing YouTube today, the channels and what they focus on seems vastly different (not saying worse, as I don't even know or watch them).
I actually had to go look some memories up while posting this. This is far from exhaustive, but if you want to waste some hours going down a few rabbit holes, the common ones I'm finding are Element Animation (basically all of them), Slamacow (Cube Land and From the Ground Up), Mineworks, Sam Green (Epic Minequest), Yogscast (Lewis and Simon) (How Do I Craft This Again, Diggy Diggy Hole), BebopVox, ZexyZek (or probably more appropriately, the LindeeLink voiced parodies), TryHardNinja, RxReckonHD (Night at the Mineseum and the "Minecraft and real world crossover" videos), SkyDoesMinecraft, Jolly ol Brits, and CaptainSparklez (Revenge and Fallen Kingdom series, mostly liking the second one of the... four... [?] or is there more now?).
Not a channel, but a separate mention of this...
I'm sure those numbers are way outdated.
There's also one particular video I'm remembering from sometime between probably 2011 and 2013, that was an animation (I want to say it was not in a drawn/cartoon style but I am not positive) and I was wanting to find it again to see if it was ever continued. Unfortunately, I can't remember much about it, other than that Steve (I think?) shows up to a sort of temple-esque place (loosely Japanese inspired I think) where someone else lives, and goes to set out on an adventure (again, I think). I want to say there was one or maybe two videos I watched at the time of it. Unfortunately, I know so little about it to actually describe it, but I'd know it if I saw it again.
Loved the parody period of Minecraft, still listen to them to get in the mood or hear them over the original songs.
Element Animation, Slamacow, Blue Monkey, some great animations out there then too.
As for current, a mixture of Hermitcraft. Mainly BDubs, Grian, Etho, Keralis, a majority of others if given time. Depends on if there is a story happening and who is involved just to see from the other side. Really enjoyed seeing the other side of the Dragon Bros recruitment from last season.
Outside I followed Logical Geek Boy from an early stage as he made the Death Star in the Nether as his base, watch the occasional video on the Legacy server he plays on but preferred his Beyond Logic series more (formally Road to Hermitcraft).
I'm not even sure what Hermitcraft is but I keep seeing the term. I'm just finding a webpage with a lot of videos (streams of lets plays based on maps and rules I'm guessing?).
There really was something special about the YouTube community in the 2012 to 2014 period, or maybe I'm biased as that's when I started playing. In contrast, though, I think the game itself is definitely better overall today than back then (although some aspects may be a bit subjective). I think the Java Edition specifically was at its peak more back then than it is today though, and Minecraft as a whole was more novel, so everything felt more prominent, and AntVenom made a video elaborating more on this. Minecraft itself is objectively bigger, but certain parts of the community (this forum, YouTube) seem less active or different to many of the older players.
That said, there certainly appears to be no shortage of Minecraft content on YouTube still (happily surprised to see some of the channels I mentioned still, or back to, doing Minecraft, and interested at how others are still active but moved onto other things, while some sort of went more inactive) but it definitely does seem a different stroke than the content that was more popular back then (and not necessarily in a bad/worse way, just definitely different). At a glance, it looks like things like lets plays and building tutorials seem to be a bit more prominent as opposed to animations or shorts, parodies, etc., but I guess when the content count itself just goes way up there might still be a lot of that too so maybe it depends on what the Youtube feed gives you.
Hermitcraft is a server based series where about 15 -20 gamers have gathered on a new world and go from there, build bases, farms, prank each other etc. This season in particular they have used a mushroom island as their shopping district, elected a mayor who changed the Mycelium to grass and now a friendly war has broken out with some of them wanting the island reverted back.
Some fans have provided a weekly recap of things that have happened, usually 10-15 minute videos: Hermitcraft Recap.
Minecraft itself is objectively bigger, but certain parts of the community (this forum, YouTube) seem less active or different to many of the older players.
There's currently 45 users online according to the footer on the forums page. Compare that to the peak of 35,000 or so concurrent users back in 2014 and I think it's fair to say that this forum doesn't just seem less active. I'm glad to see the recent resurgence on youtube though.

He literally talks so fast that he slurs his words to the point of them being unrecognizable (seriously, slow any video of his down to half speed and listen, he's literally not forming complete words or even sentences most of the time) and he rambles like crazy instead of getting to the point.
I'm also on the hermitcraft boat, with Mumbo, Iskall, Grian, and recently Keralis and Tango.
