You could try turning off smooth lighting. It won't be perfect, but it will make the lighting look a lot more blocky, as well as provide a performance boost.

It is worth noting that smooth lighting only affects the time spent on rendering chunks (chunk updates, not drawing them on the screen) as the game sends the same amount of data to the GPU either way (smooth lighting alters the color and brightness of each vertex, which is always set; I see no difference in steady-state FPS in 1.6.4).
Also, lighting in Beta did not have any color tint (in particular, block light is tinted yellow and flickers, which was added in Beta 1.8, which is generally not considered to be "beta", which ended at Beta 1.7.3), which I assume is what people mean by "beta lighting" (smooth lighting was added in Beta 1.3 so it could still be considered to be "beta"); the only way to change this is to use a mod to alter the internal lightmap (Optifine lets you use a custom lightmap but it is not available for 1.15.2 yet).
Another possible difference is that complete darkness was darker; currently even on Moody it only goes down to 5% of full screen brightness, which may be quite easy to see in depending on monitor settings (IMO this is a major flaw and I changed it to be completely dark regardless of the brightness setting, which now works as a "gamma" (its internal name and function) setting should, by altering the curve used to translate light levels into on-screen brightness values without affecting the extremes. Using a custom lightmap with Optifine can give the same effect, again, only for 1.14.4 or older versions as of now).

Why do I still play in 1.6.4?
I do mean the lighting from beta 1.7.3. How would I go about setting up a custom lightmap in optifine?
