Java, just because I don't like the controls or graphics in Win-10
Others no doubt have better info on the differences, as I understand it, Win-10 would have less lag, Java has free mods, the ability to play older versions, better (or different anyway) redstone functionality.
But you should play both and see which you prefer.
Try some servers on both and see if you prefer either community.
And ask in the Bedrock section of the forums as well to get balanced views.
If you're going for only vanilla play and don't plan on making any complex redstone machines, Windows 10 edition is probably the better choice. It's got better graphics and smoother gameplay.
Redstone is another thing I enjoy doing and can say I will be making huge redstone builds in my world. Someone already said that the redstone is different... I didn't know that. I'll look more in to the differences.
Another reason I was considering bedrock was because of the native VR support where as java is a mod and you need to wait a while on it being updated, hopefully that'll be added to java in the future as a feature.

Don't count on it. Also, Vivecraft is compatible with most versions from 1.7.10 all the way to 1.14.4, so there's really no issue there. Additionally, the bedrock 'native VR support' is limited to only GearVR (mobile phones) and Windows Mixed Reality for Windows 10 Edition, and doesn't offer the same level of control as Vivecraft does.
I would recommend Java. I've tried Win-10 and Java, and Java is still my favourite because you can install mobs, play lot's of Minecraft servers like Hypixel, etc.

Since you are planning to build a lot of redstone contraptions you should take a look at Mumbo Jumbo‘s Youtube video „My LOVE HATE relationship with Minecraft BEDROCK“
Mumbo Jumbo is a redstone expert and he describes in this video how redstone works differently in the Java and the Bedrock versions and why it is the deciding factor for him to choose Java.
I have both versions but prefer Java because of its versatility (free mods, texture packs, etc). The Bedrock edition just wants you to spend money on extras. I don‘t mind paying money for things I really use, but I have had bad experiences with the pocket edition, purchasing extras for my grandson based on a couple of screenshots, and he ended up not liking or using them.
The problem with vivecraft is normally it's 3 months after the update releases that the mod get's updated. Also bedrock supports more than gear VR and WMR I've played on oculus and vive and they were both supported.
Having said that I'll stick with java after watching a video explaining redstone differences.
I use Java because it is very hard to make the farms that you can in java. Spawn parameters are kind of random in a way in Win 10 and it's very easy to make a design that works everytime in java. Same thing with redstone. Redstone sometimes is actually random in win 10. Therefore the contraptions are unreliable.
If you don't care about that stuff, win10 does run a lot smoother and just feels better, but in my opinion, java is a lot easier to play if you use a massive amount of resources.

Not played minecraft in around 6 years and was thinking of playing again. I have both java and windows 10 edition.
I know they are trying to make the versions all the same but in your opinion which version should I play and why?

I forgot about the oculus version but what version supports the Vive and how do I play it?
