I believe that if we add more structures and mobs to the nether it may add a different aspect of survival in the game.
Maybe a rotted redwood type block like a tree in the overworld. Harvesting and replanting new blocks in the overworld may add a new concept to nether exploration, and if you let the plant sit in the overworld for to long it will take it to much air and it will turn into a normal block or just disappear(I’m thinking a stone type block. Quartz is also old and maybe new types of ore and caves introduced might be fun to attack in the nether.
Maybe a very rare type food from the nether aswell, although farming nether skulls without a farm might take a lot of time, players will spend more time in the nether trying to farm new types of foods and other new things.
Upside down villages maybe on the roof of the nether may add a new way for good type of loot, since the villages are hard to access you may be rewarded with better loot.
A new boss
I understand the wither is the boss from the the nether but I also believe another mob may make the game more fun. Maybe a rideable/animal that can be tamed, that can be used after defeating the enderdragon, defeating the enderdragon is always supposed to be the final boss, but the wither doesn’t always pose the biggest threat as another boss besides the enderdragon, At least if you are with more people or are a very experienced Minecraft player. I believe a new threat may attract more players who like the fighting aspect of the game in for a lot more time. Summoning the mob through dropping/donating blocks/ items into a shrine maybe. The mob would drop the egg of its species when killed like the enderdragon but would actually be able to be spawned in the realm of your choice. Not being able to travel through realms would be the issue. Raising the animal from a baby would automatically tame it for you. Travel would be easy and efficient even though elytra are in the game it would maybe attract new players to the concept of maybe destroying blocks on movement or flight. Now I understand this new boss wouldn’t feel like minecraft at first, but it would feel like your adding a new mod to the game, something never experienced before. I guess what I’m generally trying to say is that other than the two main bosses they are no big threats for Minecraft players so most players would like more.
I agree, the Nether should receive an update. The Nether in my opinion (as well as most other Minecraft users) should receive an update instructure, mobs, items, and ores.
I really like the food concept of your post. It would be an interesting update portion if the food gave some type of themed buff for the Nether (like how Chorus Fruit has teleportation upon consumption of the food item - similar to that concept). I was thinking some Absorption and/or Fire Resistance possibly. This would be a nice addition as this would bring a long a new form of meta for minecraft PVP and PVE, but to avoid an over-subacute amount of broken gameplay, there would be a small chance for a small amount of wither effect ( 1- 2 seconds - like a spider eye almost but with a smaller chance of the negative effect).
Why add the negative connotation towards a new food item? Well, this is to remind players of the 'hell' of a place that the Nether is - pun intended.
Ores, I was thinking for a type of tool or building material. Not sure what the ore would be, but if this was the case, I would probably add it for one of those two services.
Mobs, I was thinking of adding some kind of ground sporemite or something in the "pests" category, just to make the nether a little less bland. Maybe these little guys spawn from broken blocks or nether wart farms,
For structures, I was thinking of like a Nether Temple guarded more heavily with wither skeletons and such with possible loot like enc. books, ores, and maybe an occasional skull in a chest here and there.
These are some basic outlines for my principles of the update on the Nether, I don't think any of them will be added, but just to post personal opinion out there; that would be nice.
