I enjoy creating stuff. Playing maps and mods is one thing, but creating them is much better, in my opinion. I make datapacks and commands for maps. I enjoy watching my creations develop and become something. I aspire to many amazing people, and maybe, just maybe, I will become aspired to.
Start creating stuff. Even if you aren't good at making maps, try. You'll get better. You know the saying, "practice makes perfect". It is quite true when it comes to creating stuff in Minecraft. If you don't like building maps, maybe try commanding them. Commanding is hard to start and understand, but if you study it and practice it (which is fun IMO), it will pay off. Maybe you're a good artist, make a resourcepack. Maybe try creating 3D models. If you are really technical, create a mod. It doesn't matter if nobody likes your creations because they will suck if you have no practice. But, if you try hard enough, dedicate enough time, and practice enough, you might create something people love.
TL;DR: Create stuff, whether it's a map, a mod, a resourcepack, or something else. Practice it and you will get good at it.

I am great at command blocks, mediocre at redstone, and I am a huge fan of Minecraft. I enjoy working with command blocks. If you have an idea for a custom command block creation or you need help with commands, PM me! I create interesting posts and datapacks.
It does get stale but that's largely because the big changes the community have asked for over the years haven't happened.
There was a poll on cubic chunks and an overwhelming majority of the community seemed to have been in favour of that becoming an official update.
But it never happened.
I would also want more dimensions added, like the aether
and my personal favourite from a mod, Twilight Forest, if you've seen what that mod has you'd understand why.
But I think some things from mods should become part of the vanilla game.
I agree too, but I can understand why Mojang usually does not add many suggestions as most "does not feel like vanilla", or something along the lines of that, however, they could at least consider the mods that don't overly change the game like Quark. Maybe one of these updates will be a good update. They have been good with the updates recently but like you were talking about. Could be a lot better.
