hey whats the best way to get emeralds from villagers in 1.14? in 1.13 it was farmer villagers. can anyone help me?
Best needs qualification…
Farmers still probably have the easiest desired things to farm (possibly excepting the butcher raw chicken trade or the fletcher stick trade) with the main difference that in 1.14.x it becomes very easy to produce more of a commodity than a villager can buy in a session (ie before needing to reset its trades)...
Two basic solutions exist:
first being to wait for trades to renew (hopefully finding something at least productive if not interesting to do whilst waiting),
second being to keep multiple villagers so that the number of villagers times the average number of trades before locking (thought to be 7) equals or exceeds the quantity one produces for trade per trading cycle.
If 'best' is read as how to get the maximum amount of emeralds in a set amount of player 'keyboard time', the second option probably qualifies.
[ The downsides to this option is that setting up trade halls has become much more finicky, the halls more fragile, and the villagers more laggy (on a per villager level).]
There also remains the issue that villagers are unavailable for trading during certain parts of the MC day cycle (and during raids, although one would want to manage the surroundings such that raids could not occur in the area around a trading hall).

WARNING: I have an extemely "grindy" playstyle; YMMV — if this doesn't seem fun to you, mine what you can from it & bin the rest.
make a lot of composters and if there is villagers with no job they should turn into farmers and they will have wheat trades and carrots and potato trades and will give you a emerald so its basically the same way to get emeralds fast as it was in 1.13
