Thanks, for some reason every time I search for how to build more village houses everyone uses glass. But the tutorial you cited also shows no glass. So I just couldn't figure that out....until I get home of course hah.
More seriously, there are currently a number of known bugs with villages and villagers.
Some were fixed in the 1.14.1 snapshots (two of which have been released to date), other have not…
…and still another set are claimed as fixed, but still receiving communty reports of persisting.
The rapidity of the changing mechanics and the continuing likelyhood that further changes will be needed to reach a stable, playable version make it understandable that the wiki is silent or out of date in some particulars.
To the bulletted points:
None of the generated structures is required 'as is' so aesthetics (like the presence or absence of glass) may be freely changed.
Exactly what counts as a village is still generating conflicting reports: a villager plus its claimed bed seems to be true, at least one villager and its claimed WS is also mentioned in some reports, and some information that a village center is defined by a bell (or claimed bell in some cases) exists.
Population up to and including 1.13 was 0.35 times the number of validated doors. As mentioned above, in 1.14 this becomes the number of available beds. ["Available" is also still a bit slippery as there are reports of player beds being used by villagers (wether this is being considered as a bug or not is unclear) and a villager may make and maintain a bed claim at ranges large enough (and under conditions complex enough) that this number may not be readilty apparent.]

There has been no official mention [AFAIK] of intended changes to siege mechanics, so it may be that only the definition of village center has changed. [The likely current definition appears to be the geometric center of the claimed beds.]
A number of relatively current [1.14.0] breeder designs appear to confirm Hexalobular's report. [Note, however, that unclaimed beds for potential villager offspring are required before breeding occurs ie two villagers require three beds to breed successfully.]
