I have been making screenshots of my Minecraft seed's map in Amidst and then using Photoshop to circle and label the villages I have discovered and draw any roads I have made.
Is there an easier way to do this? I haven't found a way in Amidst to make notes on the map. Any ideas would be appreciated!
In 1.13 you can add markers to maps using banners.
There are various programs that will produce maps based either on the world (like amidst) or only the explored areas.
Some of these (there was one mentioned recently that used the forge engine, but the thread seems to have been a victim of the great purge as has one of the amidst thread http://www.minecraftforum.net/forums/mapping-and-modding/minecraft-tools/2626547 ) will show player made changes as they work from the MC save files.
Absent finding one of these that will work for the version you play, marking up screenshots is the best solution I've been able to find. [GIMP rather than PS in my case ]
WARNING: I have an extemely "grindy" playstyle; YMMV — if this doesn't seem fun to you, mine what you can from it & bin the rest.
