In the deeply convoluted minecraft lore, chunks are a real thing and they appear where players exist, some players make more chunks appear around them than others. Past the border of chunks loading, there's just void, the sun and moon orbit through empty space. But that's JUST A improvisation, a GAME improvisation.
The sun and moon do NOT orbit around Minecraft. That just happens to be an in-game limitation for convenience. This is not the real world, after all, and real-world physics do not necessarily apply in every instance. Celestial mechanics just happens to be one of those instances, and per usual Minecraft development it wasn't fully implemented and we have these little inconsistencies everywhere.

So basically what happens, is Jeb likes to go bowling, so he uses two bowling balls and chucks them across the sky each day, but he can’t ever hit the pins, so he keeps trying. But we can’t percieve his godly bowling, so all we see is some balls of light flying across the sky.

Actually, to whoever said the world isn't infinite, AntVenom can prove you wrong! He removed his world border and later discovered what he called the "farther lands".
I can't remember the end poem or whatever, but is there any official or lore source about this?
The world limits I always took as technical limitations only, and not as any official or lore reasons about the world or the way the Minecraft universe works.
I always presumed the world was either just a flat plane, or a block-shaped planet, probably the former as there is no in-game indication of an "edge" at any point in the terrain to a supposed planet, and they revolved around it, but I never actually put thought into it.
Discworld, that sounds familiar, pretty sure I have a friend who’s into that, maybe not. Is there a character called Granny Weatherwacks? I’m probably just crazy.
Just checked my bookshelfs, and found some, Granny weather wax I believe, and I’m pretty sure its by Terry Pratchet.

If the Minecraft world is infinite, how does the moon orbit the Overworld/Earth/whatever, and how does that orbit the Sun?

Maybe there could be a future update that adds space travel, and fixes the sun and moon orbit thing.

Well, all minecraft worlds are always limited to the 32 bit integer limit -2147483648 to 2147483647 blocks
Huh. I guess you're probably right. I thought the farlands started that far out, for some reason.

As for a blocky planet, that would sort of work, because gravity wouldn't be square.

Actually, PC Java worlds (Overworld specifically) are 256 blocks high (Y coordinates) and 60,000,000 blocks in both the X and Z coordinates.
(+/- 30,000,000 from 0,0)
That's a total of 3,600,000,000,000,000 blocks in area and 921,600,000,000,000,000 total blocks in volume.
That's considerably larger than the surface area of Earth and closer to the surface area of Neptune.
