I have many good memories from the past with my friends as well as some online ones. My favorite thing used to be playing on the voltz modpack before the fallout, it was one of a kind at the time. A war modpack. Sadly most of those mods are not updated or have changed drastically.
Mining and exploring. There's something therapeutic about getting various ores deep underground or finding epic areas to build a new base in. Aside from that, designing farms. I play Bedrock edition, and most of the technical community (e.g. Scicraft) spends their time on Java, meaning the only one I can ask for help with high efficiency farms is myself. More recently, in preparation for my survival world, I've been looking to make high-speed Guardian and Enderman farms comparable to what Gnembon does.
In survival, I like to explore and go mining (I typically play with a decent of mods, so there are a ton more things to find when mining) I also have a special profile in my launcher where I go destroy various maps with a modded TNT cannon (in creative mode, of course)
This may sound strange, but I actually have the most fun in Minecraft starting all over, from SCRATCH, by myself, on Survival mode.
There is just something special about having to literally start with nothing other than your bare hands (thank god you can literally chop up trees etc. with your bare hands in Minecraft
I love the struggle of trying to build your first house, keep yourself fed, and start your first Mine, after starting out naked and afraid, from scratch
I feel a real sense of accomplishment after doing that.
I remember the first time I played Minecraft online I joined a server that claimed to be "mostly vanilla".
It was a real joke. You started out with items, weapons, FOOD, and had the ability to "tp" (teleport), etc. etc.
And people there would hand out powerful items like it was nothing.
Talk about a HORRIBLE experience. Not to mention SERIOUSLY lame and pathetic.
But yea, starting out fresh, from scratch, in a totally new and untouched world, is my favorite part of Minecraft
Mine personally is building little worlds on Singleplayer, hoping one day I can use them on a Realm or something.

Automating my mob farms. Takes hours cause I get bored easily.
