I am underground. I found a lava pool and used wager to change it to obsidian. My problem is it is more than one block deep so harvesting it seems to be impossible. I break a block of obsidian and it falls into the lava below. Is there a method or am I just out of luck with it?
If you keep the water flowing on the Obsidian it will change the Lava underneath the Obsidian as soon as you break it, before the item can fall on the Lava.

If you're careful, you can dig down one level next to the lava pool, so you're standing on the blocks even with the layer of lava just under the obsidian crust. You can walk up against the obsidian block you're breaking and sort of get halfway over the lava under it when it breaks, then quickly -- and I do mean quickly -- use a bucket of water to place water and obsidianize the newly exposed lava. If you don't go too far, you won't fall in. You can also hold shift and sneak and avoid falling in that way. You'll still lose the occasional block that falls the wrong way, especially if the lava extends under the edge of a wall, but you can catch most of them before they fall into the lava. Keep a fire resistance potion in your hotbar and wear some good armor so you survive long enough to use the potion if you do fall into the lava yourself.
