You know gravel, diorite, andesite, and that other stuff? It's the bane of my existence, and I hate to ever pick it up. A clean inventory is a happy inventory when it's not filled with all that.
I agree with,all except for gravels. I love gravels but sometimes I know it may get annoying. But I love it because of its flint, which will be used to mak arrows or flint steel. I personally barely used andesite except when in creative. I am honest here that I will build up with Andesite rather than cobblestone. It is way less worth than cobblestone.
The first thing I will dump is the Granite or the Andesite.
I can't really say which item I hate the most, even poisonous potatoes have some use (I eat them); as far as least-used it would be most redstone items and a lot more, actually, since my playstyle is mostly just caving and I do not make any sort of fancy redstone-based contraptions (which would mostly be for automated farms, of which I've never built any since they are of little use to me) and do not build anything besides a main base, some simple secondary bases/outposts and a basic rail system. Another significant item (or block) that I've never used is a beacon, which would not work very well for my playstyle (Speed might be useful at my main base but I don't really need to walk that far and spend very little time there) and I've only ever gotten 2 Wither skeleton skulls, both by accident and across two different worlds. There are many other items which I only use once or twice in a given world, such as a carrot on a stick (just to get "when pigs fly"), golden apples (two to cure a couple zombie villagers), or potions (two splash potions of Weakness to cure zombie villagers and one or two Fire Resistance potions; this also makes their ingredients among my least-used items, most of the Blaze powder that I use is for Eyes of Ender and Ender chests, not brewing).
As for most-used/crafted item, this is pretty self-explanatory - more than half a million torches and cobblestone placed each and more than 2.4 million uses of a diamond pickaxe, in a single world (which actually reminds me - gold tools??? Golden hoes have to be the least-used item by any player; diamond hoes are often ridiculed though their high durability can actually be useful, and prior to 1.8 you may have to buy them from a blacksmith to unlock trades (only 7 emeralds) so you may as well use them):

(notice however that I have hardly used many of these; all the blocks of coal, etc that I craft are stored away in chests and the ones I did place were placed in the floor in front of the chests to mark them; the exception is redstone, which I place below powered rails to power them, which is the only redstone that I use unless you count doors and buttons)

(if you compare the amount of iron and gold ingots that I've crafted (smelted) to the number of blocks crafted I have a surplus of blocks - due to all the iron and gold I found in minecarts, which exceeds what little iron and gold I use, which is basically only anvils and powered rails)

I think they should add a feature that allows you to cook rotten flesh into cooked flesh and once you eat it, it restores 1 hunger bar.

Curse books are some of my least favourite items, because without the exploit on the grindstone there is no way to remove curses.
I admit curse of binding and curse of vanishing may have some use in PVP, but not everybody plays in competition against other's, some servers don't even allow griefing so that is a moot point, as it is a very situational enchantment that is not helpful for all players.
Other than cursed books and poisonous potatoes, it's hard for me to decide which is the least favourite item in the game for me.
But if I had to pick some more on the list, it would be gold armour, I only use gold boots for Piglin repellent, but otherwise it sucks, with having the second lowest durability in the game, I keep the golden swords I get off Zombified Piglin as trophies for killing them however. And of course late game everyone knows wooden tools are useless.
I used to think rotten flesh was useless, until I figured out years ago that can be used to breed Wolves, forcing me to change my opinion. You still get ripped off in trades though, 32 rotten flesh units per 1 emerald doesn't sound like a fair bargain, considering the risk you put yourself in early game to get this.
Some of my favourite items in the game are Silk touch enchantment, as I use it almost exclusively for decoration blocks, as it helps me not waste glass if I don't place panes or glass blocks down properly, not that it's that much of an issue to break glass as you can get renewable glass from librarians, but it helps. Another item I like using is stone bricks, stone is abundant and durable, it holds up well to Creeper explosions although not indestructible obviously, it can still be broken by them, but they don't leave massive craters in stone like they would in dirt or sand.
I like using lanterns as well, not only can you get loads off them off Librarian trades, but they look nicer than torches for certain builds.
Gravel is not a bad resource for me, I usually carry a shovel with me when I'm mining and I make plenty of chests to put dirt, gravel, diorite, andesite etc away when I'm digging around for ores. I use gravel for making concrete which makes me appreciate the resource a lot more. Of course Soul fire lanterns have lower luminosity than regular ones but on a mushroom island it really does not matter.
Shulker boxes is of course one of my favourite items in the game, and you would have figured out why after reading this,
I love how it allows for expanding Ender Chest capacity, meaning the Ender Chest max capacity is now 27 chests worth.
I mean the last time was 2015 - and that was retextured by myself so it was a steel blue colour for the then church roof. Since I changed the roof I just haven't used it, it's just not an appealng color to build with!

I don't know where to begin. Since i am an overworld nomad, there is a ton of stuff i consider annoying or useless.
What makes the messed up inventory worse is actually how items are sorted, when picked up.
They wander straight into the hotbar, which annoys the hell out of me, when i swim with a boat through a swamp.
So Lillypad might just be my most hated, becouse i KNOW i'll have to sort them out AGAIN.
It would be better if we had a favourite system added to the game where we could choose what items immediately go to the free space in the hotbar when picked up. Everything else goes into the inventory stockpile.
Personally I don't have a huge problem with this feature, I wouldn't care if it were changed to your liking, but I do not believe it breaks the game
enough to be a priority for Mojang to change. Compared to other issues with the game it is so far down the bottom.
I would consider not being able to make poison potions out of poisonous potatoes or to compost them more of an annoyance,
at least with Lilypads you can compost them.
To prevent unwanted items going to the hotbar, you can do this by filling it up with stuff you want there,
or in early game do what I do and put placeholders there until you've gotten more advanced tools and food items.
I avoid picking up items I don't want by filling my inventory with items that I do want, only freeing slots when I want to pick something up (e.g. if I find diamonds, which I normally do not have a slot for since they are rare, or when in a mineshaft, rails and cobwebs (if I find a spawner, I don't take the cobwebs elsewhere, except to get a multiple of 4 so there are non left over after crafting them into cobweb blocks), or extreme hills, emerald ore, etc; the only mob drops I pick up while caving are helmets, which I wear (I have this weird quirk of only wearing helmets dropped by mobs), diamond/amethyst mob drops, glowstone/redstone/sticks/potions from witches, potatoes/carrots from zombies, ender pearls from endermen, and the occasional stack of bones for bonemeal). My "default" "empty" inventory, shown here, reflects the fact that most of what I mine is coal (if I need more space for something else, commonly redstone when deeper down, I just right-click to split the stack and replace coal with one half; by doing this you never have an empty slot, except when you need to pick up something that you don't already have, thus I typically only have to throw out a few items per session, e.g. picking up a desired mob drop from a pile):

That's the point. To prevent that, i have to take them into the inventory.

I see what you mean, in that case non block items such as Lilypads should definitely be changed to go to inventory first, hotbar last.
With the only exceptions to the rule being weapons, tools, ender pearls, potions, food, totem of undying, minecarts, cauldrons, torches, lanterns and any other item you're likely to need in the hotbar at that moment such as the boat example you've given.
It would be a good idea to bundle this feature in my opinion in an update that allows you to carry a lantern in the offhand,
and then dynamically light your way through a cave system in the vanilla game, this would be a good opportunity to update the inventory system.
