I swear to god people are so impatient. 1.12 comes out and now everyone asking their favorite texture pack and mod creators, "When is 1.12 version coming out?" AND IT'S THE DAY OF! And then they're trying to use the outdated texturepack/mod on 1.12 and you can guess what happens next, "hey dude! There's something wrong with your texturepack/mod!" YOU DON'T SAY?!
I'm not speaking for myself because I've never created anything, but I'm speaking for all the creators out there who are annoyed as all hell about that.
To be honest look how many people lay low and don't go to latest version I feel latest version runs the worst due to all the errors and bugs still included. Why servers who offer 1.12 are bad.
I don't understand why there are people who play new updates right after it comes out and then EXPECT for mod/resource pack creators to automatically have an update out for their things as well. Most mod authors have responsibilities and jobs, it's just a nuisance when people constantly bug the creators for them to update their mods/resource packs.

I didn't actually think of that, but you are correct.
optifine is compatible already with 1.12.1 with forge if you can find it. I found that the twitch launcher really helped narrow that down for the forge.
Probably almost all of the people who do that are kids who cannot grasp how long and the effort it takes to make and update mods and resource packs. The newer generation was raised in the age of the internet, smartphones, and online streaming. Everything is made to be instant and convenient. The concept of waiting is becoming more and more foreign by the day. It's natural young people are more self-centered and impatient.

I am currently lurking more than I am posting. I haven't gone anywhere.
As a server owner, I actually had this very topic in mind, when I set our guideline on updates. Mind you; our server does NOT use server-side mods of any kind.... So, I don't have the same appreciation for modded content (or concern that a given mod isn't yet updated). That's one of the reasons we DON'T use "Server-side" mods. But due to the nature of our server's content, we no longer update to the next version before Optifine is available to support it.
I make it clear to my players that.....
1. We will NEVER apply a snapshot launcher to the server, regardless of how 'stable' it is reported to be.
2. The version's launcher must be available on our host domain (my host seems to be pretty thorough in their pre-testing, before offering the version as a standard; users can still upload the 'latest' before the host makes it available, but I prefer to avoid any confusion or misconfiguration by waiting for their in-house offering of the launcher.
2. The server will not be updated to a version until it is supported by Optifine (We have some intense redstone machines that make playing without Optifine choppy, to say the least.).
By waiting until at least Optifine is available (which I believe runs on the same platform as many mods...), our players don't suffer being forced to play 'without' the client-side mods they use to optimize performance.
So.... I'm kind of doing my part to reduce the amount of complaints.... however small my player base is.
As far as updating mods go, especially mods that make more than just minor changes, I can't see why people need them to be updated to the latest version; heck, if I updated my own 1.6.4 mod "TheMasterCaver's World" to 1.12.1 I'd actually remove or replace some vanilla features to make it behave the same in either version far as all the features I added go (it would still have more features but those new vanilla features are not the point of using the mod, and if really requested many would be easy to add; 99% of the work in adding glazed terracotta was making the textures, not coding the blocks in, same for most other blocks aside from more complex ones like slime blocks and structure blocks). There are even mods, like Et Futurum, that are solely designed to backport features to older versions (1.7.10 in this case. I do not see my mod as a backport mod even if it includes some features from newer versions and many of are not identical to vanilla).
This is also why I have not updated to any version newer than 1.6.4, which I'd absolutely never play without mods due to changes they made in 1.7 (more so for my first world, for which I'd also want the exact same world generation so new chunks match old ones).
Impatience, or rather, what happens if too much time goes by and it turns into apathy, also plays a major part - I just no longer care about new updates (or suggestions, at least how they might affect me, since I do still care about how they might affect others, like one suggestion that suggests that caves should be nerfed even more(!) than they were in 1.7).
And then they're trying to use the outdated texturepack on 1.12 and you can guess what happens next, "hey dude! There's something wrong with your texturepack!"
1.12 would work on any texture pack for a lower version, though. The missing textures would get set to default.

To download the other ones you need to make a folder in the versions folder for minecraft and put the client and JSON file for the versions in there. They all need to be named the same aside from file extensions. Once you do that, you will be able to choose that version when making a new profile with the minecraft launcher.
If the impatience is that bad, I would make a very bad content creator, because I wouldn't be fast to update and wouldn't know how to deal with all the complaints, haha.

I've become more and more apathetic to updating these days ever since 1.7 and 1.8, even though the more recent versions I don't mind as much so it's not that I have a dislike to the newer versions or anything (1.7 and 1.8 were roadblocks at first for sure though), but the seemingly required changes in textures every few versions gets annoying and make me put it off. Since I spend less time playing than I used to years ago, the time I DO put into Minecraft, I like to just put into playing and building. I do use OptiFine, and I guess Forge for the one whole visual-only mod I use, so I'd also have to wait on those, but those would likely be updated before I got around to it anyway.
Back between 1.2.5 and 1.6.4 though, I was typically only using MCPatcher and a texture pack at first, and in those days I'd generally update Minecraft day one. MCPatcher I recall being fast to update, and the texture pack usually was too (even though John Smith stopped updating himself around the time I started playing). I remember with 1.7 was when the first large wait came with OptiFine, but I was even slower to upgrade to that one even once it was available. Things were simpler back then, even though I've kept it simple (one texture pack, one visual only mod,and OptiFine). I couldn't imagine dealing dozens of mods.
