I've always used the defaults; even in 1.7+ I still double-tap W to sprint instead of using Ctrl (which is zoom in older versions with Optifine), and an additional keybinding that I added in one of my mods is even permanently hard-coded in.
I set sprint to Alt because it's incredibly awkward to put my thumb on Ctrl, and putting my pinky there doesn't come naturally. But if it's Alt I can just reach over quickly with my thumb.

The Lockheed SR-71 Blackbird would be able to cross the entire Minecraft world in just shy of 17 hours.
I have Talk set to Enter and, it's a bit weird, but I have Inventory set to I. When I first played, I had a bit of difficulty remembering what key it was, so I changed it to something I'd remember. I could change it back, but frankly it's habit now.
All the others are set to default as they don't bother me at all the way they are. Even Q. (It's not hard to avoid hitting it, people!)
I have the chat key set to enter, as Minecraft was my first PC game, so I had no idea how to open the chat. I went in to settings and set it to "enter" because that key makes sense for me to open chat! It's become such a habit over the years, and now if I go to help my brother with something I'll always try and hit "enter" to open the chat and not realize that it's not the default!

I'm used to a certain set of controls and sometimes go to great lengths to change key binds in a new game to what I'm used to. I expect the game to change to what I want, not the other way around.
But the first thing I changed even before I played the game was to take the drop item button off Q. Not just for the reason I use Q for something else, having the drop item button near the movement buttons is just a stupid thing to do. How many times have you watched a video of someone playing and they have to fight something suddenly and miss the W key and hit the Q key by accident and drop their sword? So, I move the drop item button way to the other side of the keyboard where it can't be hit accidentally.

I set the movement keys to the arrow keys and use the mouse left handed. I am left handed, but i still had to readjust because i'd always used a mouse right handed. I had a hard time remembering the default buttons and the arrow keys just make more sense.

AZQW. Sounds weird, but yeah. Forward is A, backwards is Z, I think there wasn't any strafing back then, so there was no need for any other keys. Forward, back, mouse look and fire weapon. Actually, now I think of it, I didn't even use mouse look, or it wasn't even an option. Maybe arrow keys now I think of it? That sounds right, because I remember the original Wolfenstein 3D used the arrow keys to move/look and the control key to fire. I know that because I broke the control key on my old keyboard from playing those games so much. Then I think it wasn't until one of the first Star Wars FPS games, that I first used mouse look, and by then I was used to A for forward, and Z for backwards, so I just added Q and W for strafing left and right, been stuck on those ever since. WASD just feels weird to me, so that's the first thing I change when I get a new game and it annoys me when they don't have the option to change keys, like in Fallout 4 I had to load a mod to allow me to change the keys to what I wanted.

At one time it was the default but I can see why they changed it, and can't see anybody else who uses WASD using it - in order to reach it I have to move my hand off of WASD or the mouse instead of just moving a finger. You are using a different set of movement keys which are right next to it so you don't have this issue.

For me, I just invert the sprint and sneak keys, so it feels more like a source engine game.

I use R for running. It has saved my life in PVP. And I use P for pick block.

I put "open chat" to "CAPS LOCK" and Optifine Zoom to Alt.
I set my OptiFine zoom to Button 3 (middle mouse button), my pick item to 0, and my run to R.
