Note "since the beginning of 2016" - they must have been selling over 100,000 copies per day a few years ago according to your charts but I sort of doubt that; to sell 106 million copies at 53,000 copies per day would take 2000 days or about 5 1/2 years, not much less than the 6 years since interest picked up around 2010.
Also, 40 million players per month (If that is unique players; many second-hand sources claim it is) means that over a third of all people who have ever bought the game still play it on a regular basis; I myself have had the game for over three years and still play it every single day for 3-4 hours - and I only play singleplayer and on a 3 year old version at that (I got the game when 1.5.1 was out and still exclusively play my Survival worlds in 1.6.4, and mostly near-vanilla; I've spent nearly 90 days playing in one world, and know people who have spent even more time in one world).
Is it over the peak of it's popularity trend? I would say yes.
Right now it's in a big lull because of Minecon. They're keeping new features under wraps so people who thrive on new features and snapshots are likely losing interest.

The OP's question isn't the most interesting thing to me. FWIW, I think Minecraft is going to be a staple in game libraries for a while to come. What game will replace it, to scratch the same itch? The most recent try - Seven Days to Die - is by all accounts a pretty bad game. When a new console generation comes out and they don't make Minecraft for it, then you can start chiseling the headstone.
More interesting to me is what prompts a person - ostensibly a Minecraft player - to ask the question? There does not, at the moment, seem to be any actual evidence of the game - or more to the point, game development - dying out. PC and console versions continue to get regular updates and new game modes. Sales figures seem quite strong. Web search stats mean almost nothing in this discussion - every single thing ever invented will have a quick ramp up of interest, then a long tail. I see that more as evidence of a mature community (less need to just Google "Minecraft" - everybody knows where to go to get answers) than a declining game.
So, little evidence of a "dying" game (whatever that might mean to you). Why the concern? What makes a person wake up and ask, "is this game DYING?"

The updates are what's killing it. They're beating a dead horse, pumping out new updates that alienate an older fanbase and make the game less unique to a newer one. To me, Minecraft started dying the day they changed the leather texture.

Yep Minecraft is now like 5-6 years old and not to mention games like CS, I believe they started 2002 or around and still it is popular today. Minecraft has influenced people in their culture, not to mention a lot of Minecraft reference and Easter eggs on a whole lot of TV shows, comics, and quotes. And, yep, Minecraft has around estimating, 107,000,000 sales, which means Minecraft has a whole lot of players, not counting those who illegally downloads Minecraft. In entertainment, several people proposed Minecraft to be their TV shows or series, Minecraft is even on Minecraft: Story Mode, Minecraft is even getting a movie! A lot of Youtubers play Minecraft too, and still in these days! Minecraft has a whole lot of something to offer you! The only problem is, Minecraft lags bad without Optifine.
To summarize, Minecraft isn't dying ...

I have returned after all these years and I'm internally dying inside whenever I think about the posts I've done prior to this current year. Just don't look at them.

I think that's just your perception and not reality. The game has several years of history now and most mechanics were explored and exploited in detail several years ago. So most of the more recent activity you will see is about new content that has been added to the game, but if you go looking for a cobblestone generator for example you're going to get a lot of several year old hits because there isn't much new about that and everyone knows how to do those nowadays.
I don't think Minecraft is dying, but it isn't necessarily "trending" anymore. It's been at a point where anybody and everybody will play, but now I think it's getting back to where just the fans will continue to play like they always have.
