I've been playing MC for Windows for a while and learnt about THE END about two months ago. I have tried and failed to find a STRONGHOLD many times now. My issue is when I release the Ender Pearl into the air outside it doesn't create a route and just disappears. I've found some of theslm up to a few hundred blocks away from me and so far the search is fruitless. At the moment I'm stuck in farming and mining. Can anyone help?
Another thing, I just found an Enderman in a cave at roughly height level 10-15. He hasn't spotted me and I decided to leave him be to retrieve my armour before I take him on. Is this of any significant meaning?
You must use Eyes of Ender crafted with an ender pearl and a blaze powder. If this is just a typo, you must've turned generate structures off. Also endermen spawning has no relevance to where the stronghold is.
The answer is easy: When you find one of them from x blocks away from you, you throw it again, and watch closely to which direction it goes, follow it, if it has fallen down to the ground pick it up again. It's rinse and repeat, as long as it finally goes INSIDE the ground, which tells you that you are on top of one.

The part I put in bold above tells me they most likely are working. When you throw them they tend to go out at an upward angle and can go behind you. So before you throw it, look more upward and if you don't immediately see it quickly turn and look the opposite direction. I recommend making a new creative world and practicing to get the hang of how they should work.
If you didn't have structures enabled it would go nowhere and just land at your feet.
Finding an enderman in a cave indicates nothing. That's perfectly normal.

TO add to this, Strongholds can be up to a thousand blocks away from your spawn. But if you turned off "generate structures" AND have already explored that area, turning it on wont make them magically show up. The reality is you're probably going to have to start a new world in that scenario.

Just spend more time playing MInecraft. You will eventually find it.

I tried it with terrible results. I gave my wife my glasses for a second, a creeper showed up and now my wife is pregnant.
