Mojang is being lazy and is decreasingly caring about their blockbuster game (updates are taking increasingly longer to make and have less content/time spent).
The combat of Minecraft 1.9 has ruined the game, and has worsen even more in 1.9.1 pre-releases.
Minecraft 1.9 was also officially released with serious bugs, like 1.8, despite Mojang spending months after October focusing on mainly bug fixing.
Not enough building blocks in the game. Mojang believes that "creativity feeds on limitations" (Searge on Twitter).
No stairs, slabs, etc. for desirable blocks (andesite, stained clay, wool, etc.).
No birch, spruce, jungle, acacia, nor dark oak variants to most wooden blocks (bookshelves, chests, trapdoors, etc.).

"A game about blocks does not have enough enough blocks" I just find that very iconic, there are plenty of blocks in a game ABOUT BLOCKS. If that's a problem, you can simply use a resource pack or download a mod.

Mojang is treating their product very well. They're being quite fair about their updates, sure it may not be what you like, but that's besides the point.
They are constantly providing many, many major updates for absolutely free, and they aren't half-fast updates, either, they actually take time to attempt to do things right, sure sometimes they screw up, but hey, they're an indie developer that are still learning, what did you expect, for everything to be perfect? That's some wishful thinking. Mojang tries their best to make their game as good as they can. They don't intentionally neglect their game, and charge for everything like some developers do, and always seemed to be community oriented (At least on Reddit). They're still giving support to their game after many years of gameplay, and even after how popular it got, which could of been an easy time for them to quit developing and take all the money. I don't see how that's not a company not treating their product well.
Anyways, I'm very happy with the game and most recent update, except for the 1.9.1 changes, which weren't thought out that well, but that won't stop my liking to the game. Either I stay on 1.9 unless they change it, or I wait until they add something major to the game, such as 1.10, and I just go with it. Obviously there are a few things I dislike about the game, but those tiny little details aren't going to stop me as a whole from enjoying the game.
I just play an older version or use mods instead of complaining about newer updates; I know that some just HAVE to play the latest version even if they do not like the changes and/or are absolutely against mods (even command block "mods"), but I'm perfectly happy playing vanilla in 1.6.4 and if I want to spice things up I use my own mods (I made one that adds in most of the 1.7 biomes as well as my own and some of the blocks and mechanics from later versions to 1.6.4; I've even been working on a new version that adds a cooldown (extended damage immunity that decreases damage taken) and a Mending-like enchantment that replaces renaming but still requires an anvil to repair things). With all of the other mods out there you can get a much richer experience than 1.9 in pretty much any version of the game (I've seen people who still play mods in 1.2.5 and older versions; in fact, I know people who still play vanilla Alpha and Beta versions).

People complain because they do not like change. The PVP'ers like the old spam click PVP cause it is exciting and fast paced. The 1.9 PVP is more bow oriented and slower paced with the change in the click rate. I like the 1.9 combat because it adds a challenge in survival. I cannot spam click because I have lag so the new pvp helps me even though I am still bad at it. I have watched pvp battles that last forever because of constant gaps/pearling/pots. I would rather the battles be shorter and more strategy oriented with bows and melee combat. Any new updates receive criticism since people are more likely to vent rather than praise. Its just the way social media and the internet works for people. I read tons more hateful messages than positive ones. We should be thankful Mojang has done what they have with this game we love so much. It could have stopped back at the survival/nether update but they decided to keep updating. Mojang gave us a launcher that allows us to play the old versions if that is what we like. I see many servers that use parts of 1.7 (cannoning physics) mixed with 1.8 and they make it work for the community. Mojang gives modders codepacks that allow them to make add ons and minigames galour. This is a game that is still popular after 6-7 years of release. There isn't many other games that can say that after 1 year much less 5 or more.

I understand what you are asking. You are not projecting, but rather asking about your observations on the community. Nothing wrong with that.
I will say that I see similar cycles happen in any community. It comes from the phrase "familiarity breeds contempt". Someone who watches movies all the time will become more critical of them. Someone who reviews video games for a living will be less forgiving of flaws. Heck, even when I went to ITT, we were asked for feedback from the teachers, and they pointed out that those in their 4th year always had more criticism than the newbies.
It's no different with the Minecraft community. What you tend to see are people who have played the game long enough to learn it inside and out, and naturally once that "honeymoon phase" is over, they notice its flaws and come online to discuss them. Some offer healthy criticism, others are more bitter and cynical.
Personally, I believe that's why mods are so popular. We crave newness, but we are also attracted to familiarity. Mods provide the best of both worlds.

I can always find something that is not in a game and complain about it. The wonderful thing about minecraft is that if you want it in the game, you can mod it and add it in. I personally cannot do this, but have seen some amazing mods/resource packs etc.. that put tons more blocks in the game. I like trying to figure out how to make things work with the given blocks rather than say that I don't like it because it doesn't place vertically( like the slabs). I have seen some creative people use stairs in ways I would never think of. Some of the detailed builds are like amazing and completely vanilla. I think the enchantments can be modded fairly easily since I have seen servers with all kinds of enchantments that are way more OP than vanilla. I tend to play minecraft in different ways when I get tired/bored with it. For example, I have been playing faction servers lately (saicopvp) and (mafiacraft). A favorite server of mine will reset their skyblock soon( AWNW.net ) and I will grind on skyblock for a few weeks or so. Survival servers will be reseting to 1.9 when all of the plugins get updated and I will play survival. You can play any minigame imaginable on many different servers or just build in creative with friends. Each time I get into a rut and am bored with it, I just quit for few days or play a different "version" of minecraft. Thats why the game has been so popular even if some fans are complaining about it. It is the only game I have on multiple platforms (PC, XBOX, IPAD) I would get it on Wii U if they will support the gamepad local multiplayer so one person can see their point of view on the TV and other through gamepad. I have donated to servers to support them and I see thousands of others doing the same. I don't think everyone is unhappy about minecraft but you will always hear about those venting online.
I didn't think about those games but you are right. My son and I will play some Mario kart still and I have thought about redownloading Half Life 2, but I have never put in the hours on those games that I have with Minecraft. The point I was making is that we don't get update after update on those games like minecraft. We have to buy the next version of the game for the updated content even though that has changed with many games adding patches and DLC the last several years.
