My 8 year old is on xbox 360 and we watch this site often, but we are having a hard time finding friends for her to play online with. Is one platform more popular than others, or better for finding friends and servers for kids on? Thanks in advance.
I'd say that the PC version is probably the most popular, using it myself. I don't know about finding other friends on minecraft forums, but I did meet someone who was interested in the same thing as me. You can look up some topics that she is into, and finding some friends there. And sometimes I can't explain things that well (its actually very common) so excuse me for lack of info or something. If you just want your kids to play on a server privately, then console for sure. If they want to find some huge popular server to play on together, then PC. It is 100x easier hosting something on console than PC.

IMO the Joypad Mod is seemingly perfect, and even allowed multiple games to be played at the same time on one PC.
Thats not mentioning that you can bind custom controls, and use any controller device Windows recognizes in it (Whether it be a Wiimote [Wiimote is more of a proof of concept, doesn't work well as you might imagine], or XB1 controller
Xbox requires live gold for each player, and they all need to be friends. Then, one can join a multiplayer game hosted by a friend, up to 8 players per world. And correct me if I am wrong, but I beleive different consoles dont mix. That is they all must be on xboxes.

The PC version is not only the most used, but also the most updated and has the most servers. I would suggest getting her the PC version, and then browsing this entire section devoted to servers to find a kid-friendly server. If you'd like a simple, small, friendly, no-griefing server with a community atmosphere, I have one I can immediately suggest: Nationcraft.
As everyone else stated, PC is a good one. But having a good experience on PC can be expensive. Minecraft does not require a beefy graphics card (in fact, i used to run it on a very cheap 80$ graphics card at 70FPS) But it requires CPU (I used an intel core 3) So, a PC for minecraft can cost around 200$-300$ (Im not sure at all, maybe it can be just 100$, maybe 500$) but actually, playing on pc can be waaaay better because of the frames or the control. (Get her to play a little bit on keboard and mouse and see what she says, but then you might want to find a sensitivity sweet spot, for me it used to be at 200%, but then i changed it to 120% because i could not aim correctly) If you want to get her friends together and make a LAN party setting the server is so easy, just make all the computers be on the same network (connected to the same router), then in-game press the "Open to LAN" button in the pause menu, then on the other computers just go to the multiplayer menu and it should look for the open server in the network. If you want to play online then go to minecraft.net, then go to download minecraft and download the server file. Then look for a tutorial, or wait till tomorrow for me to explain it because im about to go to bed and this has become a little long. But basically start the server, then to join it (Host has to do it too) you have to type the corresponding IP, then just play. Doing the second way can allow you to use plug-ins, so if they want to do stuff with creative they can use world edit for example. Just remember that there is no cross-platform play, everyone has to have the same platform, and for everyone to enjoy playing in PC everyone may have to spend some money. Personally, im a pc player because the framerate and the keyboard and mouse, I fell better with these.

It's actually fairly easy to setup PC Minecraft to respond to a Xbox controler. The mod Joypad can do this easily but is know to have a few minor issues. Or you could use a keyboard mapping software I normally recommend AntiMicro, I'll link to a thread where I explain how to set it up to have the same controls as the 360 editon.
