We're missing the hacker's point of view here, I think it would bring a lot to the table and open up a lot of interesting and insightful discussion.
"omg i dont hack, u probably hack cos you cant win and u cant even beat me with hacks cos im so good. lol gg 10/10 hearts ez"
Pretty much what they could bring. As others have said, people hack because they can't win otherwise, they're lazy, they want to be rebellious, they want to show off, etc.

You pretty much wrapped it up right here.
One time a hacker killed me, and I messaged him "Stupid hacker that needs cheats to win". He replied with "omg i dont hack u stupid noob. get a lief and im repirting u for hack acusations".
Yeah, that is what he told me, an immature message with lots of spelling mistakes and harassment.

They probably would take pleasure in trolling people with it too.
To me, there are two types of hackers in Minecraft. First there are the less malevolent hackers, who spawn stuff in because they are too much of a noob to get said stuff themselves. Then there are the more malevolent hackers who spawn stuff in and screw other people over with aimbots and other things just to make others days worse.

My battle.net is Kirbyintron#1254, if you want to play some Overwatch with me.
My avatar is a sprite of Mr Saturn from the Earthbound/Mother series of Role Playing Games.
We are specifically discussing hacking to gain an unfair advantage in PVP against people playing without hacks. Anything outside of that is irrelevant, and nobody here has said that it is or isn't okay, because nobody cares if you cheat on single player or on a server that allows it.
Hackers will do what they want because they can. It's always been like that and that way has never and will never be changed sadly... Although I've never seen hackers before, at least on Minecraft servers. I have seen them be annoying on other games.

I was looking for you to quote somebody saying that using toomanyitems to get free items in singleplayer was okay. But because you're incapable of doing that, I'll say it myself so you can quote me:
'Using toomanyitems to cheat in singleplayer is A-okay because it doesn't affect anybody but you. If you start telling people you didn't cheat, then that makes you a liar, but the actual act of spawning in items in your singleplayer world doesn't harm anybody. If you want to do it, do it. If you don't, don't nobody will force it down your throat.
Nobody asked for it to. The OP asked why people hacked, because he genuinely didn't know. He didn't ask for us to give him a miracle anti-hacker solution. You're making out like this thread has derailed into a plan for us to stop hacking via discussion, but it hasn't.
So in conclusion, you're arguing with nobody. You're arguing against points that nobody has made. Nothing you've been arguing with me or anybody else for has actually happened.

"Superstition is the religion of feeble minds."
You can't cheat in a single player world. Who exactly are you gaining an unfair advantage over in that scenario? Yourself? lol
How you equate that to taking a dishonest advantage over someone else so you can win on a server is like comparing apples to horses.
