Minecraft used to be a little more hard back in the day. The problem is the game keeps getting content that makes it easier for the most part, but no real content that makes it harder. At least from a game vs player perspective. Potions and enchants are the only example I have as I haven't played minecraft religiously after the adventure update. I'm just not feeling a single threat from the environment anymore. So multiplayer is the only real option for most players these days since the single player environment has little challenge in it anymore.
But my problem with the community these days is everything is too over-centralized. Especially cheating. I suppose that's really just the internet to blame and has nothing to do with Minecraft's community specifically. Everyone's heard of the common cheat clients. EVERYONE. Back then modding was a bit more complicated. You had to manually splice the modifications into the game files and that kinda kept the idiots and the immature people from rage cheating for the most part. Now it's just the click of a button. Everyone knows how and where to defeat the ender dragon. Everyone knows how to farm Wither skulls. It used to be back in the ol' days that people didn't even know what was the best height to mine diamonds at. Prison servers weren't OP either. Heck, prison servers were even more fun back then before enchantments, potions, and notch apples were added to the game. Those were the days..
I totally agree. The enchanting and potions make it far too easy. Once you get there, the environment provides no risk. The community aspect isn't really Minecraft, it is as you say the internet at large. Not a whole lot you can do about unfortunately. They can fix the difficulty, and I hope they do it in 1.9

Enchanting maybe, even with just knock back and fire aspect on my sword it feels a little OP. Potions however are optional, the only time I ever use potions really is to cure zombie villagers in survival.

I got the game late in 2011 or 2012. I started playing with my sister on PE for a while, her and I made a house together, and I remember I made a 5 block basement hallway type thing, that leads outside. I remember that feeling I had that was scared, because of a creeper of some sort. Anyways, after that my sister introduced me to PC, I thought it was crazy that they made the iPad to a keyboard mouse type thing, and I can hardly use the iPad now!
I had a feeling of, "Oh boy, I better not go outside, theres a creeper!" and "I love building, it has a creative feeling to it, and its such a challenge!" not "LOL a messed up pig? *1hits creeper*" and "Buildings is boring, you just type [snip]."
Its a feeling that no one can explain, but if you're creative enough and imaginative enough, you have. Some of you just have to know what I mean.
I remember when LAN came out, it was such a great experience (except for the part that it never worked). It had a newly made, original, and creative... feel to it! Now we have access to 1-button create servers, pay 500$ to be owner, and add a mod you just have to download and click it.

Servers were very unique, I'm talking about my country, I don't know things in the U.S.A but here there are only 2 server types; (they aren't unique in themselves too. They're all the same)
1) Faction PVP (Lapis Lazuli mines /warp lapis, Jobs plugin, PVP arenas, OP Factions, expensive monthly VIP's and most importantly plots)
2) Hub (Faction, Survival Games or Hunger Games, Skyblock, Creative and 1 unique server MAYBE)
In the past owners were really friendly and they were trying to help players and play with them. They were doing some spleef events sometimes. It wasn't a plugin minigame. Players was able to build their houses anywhere they want. And without protection nobody was griefing each others houses.
1.000, 5.000, 10.000, 15.000 players in one server was impossible when we saw a server with 80 players we were just "Wow look at that!" "Too many people!". When somebody founds a diamond, he starts to spam in chat like "OMG OMG OMG I FOUND A DIAMOND IM SO RIIIIIIIIIIICHHHH"
One time I found some diamonds and made a block of diamond then put it on my house. My house was made with anything I found. Cobblestone was very rare for me because I didn't knew how to obtain it. I remember my house in my favorite server. I think it was 16x20 but not sure. It had 7 floors I'm sure about that.
In singleplayer, I don't remember many things but I remember that I had a world full of my stupid creations. I remember some of them;
-A railway without pistons or anything but it was very big and long I tried to make it look like real and I used wooden planks for make it higher. Suddenly a wild lava appeared and destroyed my railway
-A chicken killer machine. It wasn't a redstone wonder. When you pull the lever dispensers were spawning a chicken to lava. That's all.
I hope I will found this map in my old computer one day. I have a world archive in it.
Now I know everything about this game and I agree with you that this game is out of its way. This is a Combat game now. No adventure, no survival, no creative. We were dying to find a chicken, cow or a pig. When we found a sheep we were raging. Now there are meat everywhere.
And here is a summary that explains why this game is bad now.
-Full of 6,7,8,9 yrs old kids.
-Useless mobs.
-No unique servers.
-Sheeps and bunnies are dropping meat.
-Useless blocks.
-Unnecessary re-textures.
-Pocket, Xbox and PS Editions. (Pi Edition is awesome no comment to it)
-Major update in every version. (1.4 Pretty Scare, 1.5 Redstone, 1.6 Horse, 1.7 Changed the World, 1.8 Bountiful, 1.9 Combat)

-MODS because some kids think mods are a part of game. And the result is this game is mature...

I disagree with most of the things, as a small server owner, I try to make my server unique and we have a balanced number of veteran players and young players who are discovering the game and are able to be respectful. You say that most new blocks are useless? I'm a builder and when they added stained clay, it gave me the chance to build many many new things, in fact, I came back to minecraft after that update. It's bad to generalize that all server owners are greedy, unfriendly and not play with players now.
I personally feel like minecraft has evolved for the better. Granted their are some aspects of it that I do not enjoy, like adding enchantments to weapons so that PVP becomes a simple game of who has better gear instead of skill, but for the most part I would say the vanilla aspect of minecraft is still there. If you want to relive the good old days, you can always play on the older versions

Everything I wanted was never put it. Cooler implementations of redstone, more transportation methods like minecarts (working collision for minecarts?). More shapes than just cubes to play with. More manipulation of lighting, or more usable lighting.
Games pretty much just a meme now, like Runescape was. You play it because everyone says you gotta play it, then forget it.

yeah like seriously how hard is it to implement more types of blocks, give us stained clay slabs/fences/stairs, you have 4000 ids to use it's not like you're going to run out.
The biggest problem with the survival updates, IMO, is that players were constantly getting buffed while mobs were staying the same. I mean, anyone who was playing in Beta/Alpha remembers how friggin terrifying they were, and how helpless you felt against them. Now, you can just sprint circles around then and kill everything in the game easily without a weapon.
