The problem is I won't be able to enjoy the server like the rest of the players will(having to maintain the server and add new features). That is the unfortunate downside of the "make a veterans server" :(.

You can't control other people, and if you care so much about the opinions of strangers on the internet that you let it affect your peace of mind, that's unhealthy. Put it this way: if you're not enjoying this discussion, there's something wrong.
The thing is... It may just be something with you having built everything you want in the game. I see other servers and groups on 1.8, and I see them building and creating amazing things all the time with redstone and blocks. I think it is actually very cool that people can make games in minecraft and little gimmiks because that shows off the building aspect of the game more than you may realize. The thing is, people seem to just focus or want to play these games made in the game so much and others see this and take it the wrong way. There's no real reason to say the game has lost it's building aspect because people still have to build the games and such in the game. As for the building/survival aspect you can find servers with that feel that have a larger community elsewhere. If you don't want to use enchants or potions, don't use them then. If you feel you are OP and want to focus on building, just don't worry about maintaining expensive gear all the time and grind out stuff like that. this thread gets very annoying to read by the day.

As for the topic in general, I agree with the OP. Just don't get too discouraged.
They started many directions but never finished one. First it was survival, then it was creative, then it was modding playground and now it turns around to be something else again.

Combat was added, but it's spam-click and there's a poor variety in weapons and armor. (Though it is very accessible as a mechanic, I'll give it that.)
Biomes were added, but they were never really made diverse, or made to transition well, etc. In an attempt to fix it later, some more biomes were added.
"Mine" is in the name of the game, but there's currently only 7 ores you can mine, and the underworld consists only of caves, ravines, 1 room "dungeons," and 3 real "dungeons".
It's a survival game, but don't bother collecting leather, you'll save time if you get diamond first.
Those servers would not exist if they were not popular, just don't play on them, and use and older version. Oh wait then you cant you all the new features. Get over your nostalgia.

You're unlikely to find many mature players on those "OP Prison" servers. It's just not appealing to them. (And me as well)
Plus the MC community is huge and very diverse. One bad apple doesn't ruin the entire batch, it just gives them a bad smell lol.

Yeah, thank god that mods are automatically downloaded so that modded servers are actually popular and it isn't time consuming to join one /s
You can mod the game all you want, and add all the right features, but there is hardly ever a group of players that have the same mods and are playing together on the same server, and never in the same quantity as playing regular Minecraft.
Yes you could make a mod that adds hay slabs to the game, but you will only be able to use them in SP, since no one else will have the mod. Even if other people have the mod, you need there to be a server with that mod installed on it, and people who have that mod need to know that server exists.... Are you starting to see what I am pointing out?
Who nominated you to speak for all "veterans"? I've been playing this game for a good long while and I think it's still great. It's one of the few games that still excites me and sparks my creativity. Perhaps your "veterans" are just people who are sick of the game(which is natural and not a reflection of the game) and need to move on?

If you're basing that statement off of forum join date, you could very well be wrong. A player's forum join date doesn't always equal their Minecraft join date. Maybe he's played Minecraft longer than he's been on the forums, like me.
