I have a nice realm and me and my kids have been building there for a few months. We're getting bored and I see there are two other Worlds available with my realm. What happens to our current world if I switch to one of the others? Will all our hard work be saved?
I believe that Realms stores all three of those worlds, but only makes backups of the one that is currently active. That means that the latest version of those worlds is always preserved, but only the active world will have backups to which you can revert.
You can easily do a test, just by downloading the currently active world and then switch worlds and switch back and see if everything is preserved. I'm pretty sure you'll be fine.

Yes, if you hit the save and quit option in the menu when you hit the escape button.

But there are backups being done - still not sure
There is a way in the options menu for your realm to download it to a singleplayer world. When you want to play it again you can upload it again
