There is so much one can do in Minecraft, making it hard to make this poll. Everyone plays Minecraft differently, and finds different things interesting. I want to see what the larger community feels. Please think about this before answering the poll. For me, the surviving, building, and fighting is why I personally still play Minecraft today!
If you feel there is more to Minecraft to what I have listed (I certainly feel there is), please tell me. Also let me know why some aspects appeal to you more than others, and also what you could live without.
Building in Survival: 2. It's like building in creative, except without the convenience of flying and with additional grindiness to gather materials in the first place. Some people like gathering materials, but to me it's not much fun (and on SMP servers I often get someone else to gather materials while I spelunk because I'm a lazy bum :P)
Surviving the Night: 1. Too easy, so it doesn't feel like I'm actually surviving anything.
General Survival: 1. Again, too easy and doesn't feel like I'm actually surviving anything.
Exploration: 2. Worlds are extremely repetitive and I rarely feel like I have a reason to explore outside of getting out of a biome I don't like, getting to a biome I don't like, or finding a specific type of tree or sapling.
Redstone: 4. I like it, but I don't make use of it often.
Creative Building: 5. Aside from redstone, building is Minecraft's best aspect, and Creative removes the grindy part of trying to do it in Survival.
Lan Multiplayer: 3. Never use it.
Servers: 5. I can't play Minecraft without servers or mods. Really. I get bored within a day of playing a single world otherwise (no idea how some people keep one world for 3+ years).
Fighting: 1. Minecraft's combat system is godawful; mobs require no strategy to beat due to their practically nonexistent difficulty (except for maybe guardians, but in that case "strategy" amounts to "placing doors everywhere") and PvP is just a matter of who had better gear and who is lagging less.
Mining: 1. Mining rarely feels like it has a tangible reward (diamonds feel bland due to being overkill; iron does the trick just fine) so I often have no motivation to mine. Doesn't help that it's ultra-repetitive.
Horses and Pets: 2. Horses are kinda useful but since I almost always play on servers, and server lag ends up making them slower than sprintjumping, I don't use them. Wolves are too stupid and weak to survive long (I once tamed four wolves, and ALL FOUR drowned when I tried to cross a twenty-block wide lake...), and cats aren't useful because creepers are extremely easy. The bug that makes them occasionally teleport to you even when they're sitting prevents me from even just keeping one in my house and avoiding bringing it into combat.
Banners: 4. A cool concept but I've never used them.
The Nether: 2. Too bland and, despite being hell, is not all that much more difficult than the Overworld.
The End: 1. Poorly-designed, has a horribly tedious and easy boss, and only really exists to prevent the Sky Dimension from being implemented any time soon. Seriously, why does Mojang think the End was a suitable replacement? Yeah, the End is a floating island and all, but the Sky Dimension is supposed to be a full dimension, with a level of content equatable to the Nether. The End is a boss dimension that serves only to be a battleground for the Enderdragon and has a level of content equivalent to a potato. Big difference, Mojang.

Building and redstone are definitely Minecraft's biggest assets. Servers change everything and have good builds, so they're pretty good also (even though I seldom play them, for some reason). As for the others, I agree with Kholdstare: combat kinda sucks, survival is far too easy, and there's no real reason to explore as it's just the same terrain and resources over and over. (MC needs better structures with better rewards).

This is a good point. After a while there is no reason to explore, because you know what every biome looks like.
Building with limited resources (survival) - 4/5 - This is what Minecraft should really be about in my opinion. Building nice things. Personally I'd rather build in Creative mode, but there is an added sense of accomplishment to doing something purely in Survival mode.
Surviving the night - 1/5 - You can do this anywhere if you just have one block and a torch. Just dig down three blocks, put a block over you, slap a torch on the wall, and go afk to pee or smoke or whatever. So it's about as much of an achievement as Taking Inventory.
Surviving in general (hunger, falls, drowning...) - 1/5 - I don't care much about this at all because it is ridiculously easy once you establish a nice home and the penalty for dying is not that bad because I don't play hardcore mode. I laugh at people who pride themselves on being able to survive in this game but can't build for squat. I can build entire kingdoms and still survive while they are usually bunkered down in some hobbit hole or dirt house.
Exploring new lands - 3/5 - Fun for a while but once you've seen very biome a few times it loses the appeal.
Redstoning - 3/5 - I used to have a lot of fun doing this but now I don't make much except for automatic chicken cookers.
Building with infinite resources (creative) - 5/5 - It's like being a kid with infinite Lego blocks. You are only limited by your imagination.
Multiplayer (LAN) - 3/5 - I dunno haven't really used it.
Multiplayer (servers) - 3/5 - They are what has made Minecraft great. Unfortunately most of their communities are terrible.
Fighting - 3/5 - I feel the fighting mechanics are just fine but I'm not really much of a fighter anymore.
Mining - 3/5 - It's a great game mechanic but I just don't feel too strongly either way about it.
Horses and Pets - 3/5 - I like having a cat or dog, and horses are nice, but I mostly just use them all for decoration. Cat and Dog AI is awful, they are too weak/squishy, and die teleporting to you a lot. Riding horses is just.. too fast. I'd rather sprint and not get motion sickness.
Banners 5/5 - I LOVE BANNERS! They give kingdoms such a unique flavor. I just wish everyone would quit using the sun pattern so much, it has gotten repetitive. More patterns would also be nice.
The Nether - 2/5 because it is mostly a pointless distraction but I gave it an extra point for having nice blocks and netherwart.
The End - 1/5 because it's another pointless achievement that distracts people from building.
