I know that Zombies can put on armor and a player head, but the arms do not match with those of a player.
It would be cool if there was a mob with the exact same model as a player so that one could create cool player enemies on a adventure map. Should Mojang add a human mob?

just the texture, you would probably need a mod for that now.
But in the very early versions of the game they had these player-like bots that would place random blocks and walk around. They also had the skin of Steve, or the default skin in Minecraft. I doubt they will ever bring them back as a new.
I'm not entirely sure. My guess is they wanted to keep it singleplayer and not have the bots in it. Or they were so derpy and the developers couldn't fix their coding

Are you talking about making an actually mob that works similar to a player? If that's what you mean, then I think it should be added, only if if it's a toggable aspect.
Only half because it would depend on how the 'human' mob was implemented.
If it was implemented as 100% optional and be used by mapmakers and server-owners: Yes
If it was implemented as a mandatory option and you have steve running at you in your SSP worlds: No
