Yeah, I know about that, but why do pistons crush other mobs like the player and zombies, but not horses?
Why do they? Because they don't, that's why. You can suffocate them (players, zombies, and I assume even horses) with opaque blocks, using a piston or sticky piston to push the block, but you can't suffocate any of them with just the piston arm, since they aren't considered opaque.
Another way is simply to use Sand/Gravel/insert-gravity-affected-block-name-here. They can even be combined with Pistons to make all the horse juice you need for a life time!

You can just go to the Minecraft store and get the concentrated dehydrated horse juice powder. Just add water, stir and enjoy. It's a heck of a lot easier than messing around with all of that redstone circuitry and such. It also stacks!
