Gold is good for potion making (I.E, the nuggets needed in making Carrots into Golden Carrots, Melons into Glistening Melons)
Gold is also important if you want any of your rail systems to have Powered Rails.
Iron is good for general use. Provides decent amount of protection (just a few armor points away from Diamond, even.) As well as weaponry like the sword provides a good attack power.
Iron is better, but is less rare, making it have less value. But in terms of overall effect, iron gets you more bang for the buck, with better armor, tools and duration. It makes shears, buckets, pistons, hoppers and iron golems, which are very useful. In addition, it's easy to find, making it your main source of protection. While gold might make tempory regen apples, it takes tons of gold to make. Iron has a solid win here.
I use gold armor because it has high enchatability ı olso use gold axe for pvp because its faster then iron axe gold tools are even faster then diamond it takes 30 seconds for ıron to mine obsidian and it takes 14 seconds for gold to mine obsidian BUT I use ıron pickaxe becouse gold cant even mine gold ore
and I get gold from nether its easy to find gold at nether I trade with piglins and get enchanted gold armor soo

and olso Im a piglin so Iove gold (sorry for the bad english)

For nether challanges gold armor is ok imo.
Only other use i see is redstone items and golden apples/carrots.
Gold tools aren't useful at all, except the axe as you explained.
I am not good nor expierienced in pvp so i can't say how good/bad a golden axe is in that situation compared to other melee weapons.

You must be playing on a server that uses plugins to enable gold to mine (harvest) obsidian since only diamond or netherite can harvest obsidian in vanilla and they are far faster because they are the proper tool (9.4 and 8.35 vs 20.85 seconds, which is more than double the speed):
This is also why any argument that "gold is faster" is a moot point to me, only basic blocks like stone can be mined faster and only for a few dozen uses, even with Unbreaking III they have less uses than unenchanted iron, and when you add Efficiency the speed benefits all but disappear - did you know that with Efficiency V wood is just as fast at mining stone? Not kidding:
Base time to mine stone = 1.5 (hardness) * 1.5 = 2.25 seconds
Wood = 2 (base efficiency) + 26 (Efficiency V) = 28; time to mine stone = 2.25 / 28 = 0.1 seconds (rounded up to 2 ticks)
Gold = 12 (base efficiency) + 26 (Efficiency V) = 38; time to mine stone = 2.25 / 38 = 0.1 seconds (rounded up to 2 ticks)
A few blocks do benefit, such as ender chests, 1.25s with wood, 1s with diamond/netherite, and 0.9s with gold, but there are very few cases where it would be worthwhile, if any (I only mine an ender chest maybe 5 times per day, saving only half a second, and since I also use Silk Touch on emerald ore I'd need another pickaxe).
Funnily enough, diamond is also easier to obtain than gold; it is slightly less common on layers 5-12 (due to a smaller vein size, they have the same vein density so the chance to find a vein is the same) but Fortune more than doubles the drops. Even while caving, where I find close to 6 times more gold and do not use Fortune, it is vastly more sustainable to use diamond due to its higher durability (Mending could negate this since I get enough XP from mining/killing mobs to keep everything near full durability, based on a limited test I once did in 1.9, but the majority of players heavily rely on XP farms so durability is still important):
If I'd mined 3.7 million blocks with gold instead I'd have had to make about 29,414 pickaxes, requiring 88,242 gold, more than what I've collected, then factor in the gold required for other tools and armor (about half the diamond I use goes to my pickaxe, the overall amount used would be a bit less with gold since gold armor has a relatively higher durability compared to tools):
An alloy of Gold with other minerals or materials, that had an usable amount of durability the enchantability of Gold, and mined 'common' blocks such as Dirt, Stone, Gravel, etc ... faster than any other tool material, would be pretty neat!
Perhaps in addition to durability, if the upcoming mineral, Copper, is thrown into the mix, the resulting tools could be charged using the new Lightning Rod block to grant an amount of 'charge' to the tools, which would enable them to mine blocks at their maximum speed.
Rose Gold does certainly have a nice ring to it.

Gold absolutely sucks as an armour material due to its low durability, which mending barely makes up for.
But you don't have to wear a full gold suit to keep the Piglin off your case in the Nether, only 1 piece, which means you could wear a pair of gold boots in addition to diamond, netherite or iron armour for the rest and you'd get the most out of your armour this way, defence wise. Just don't use Thorns.

ill mainly choose iron, quite easy to find and it doesn't break as fast as a gold sword, pick, etc.
and you can mine diamonds with iron as well.
