I've made a few maps before (Never got released) and I would recommend a few tools if you would like to make a decent adventuremap.
MCEDIT- You can apply all sorts of filters and change stuff like nbt tags, mob armour, ect.
An NBT editor (ingame nbtedit, NbtExplorer, nbtedit)- You can make custom player heads, custom enchant levels (Up to 1,000 i think), custom potion durations, and much much more!
